Strawberry Chocolate Chip Cookies

We all have our favourite chocolate chip cookie recipe, and while I make mine quite often – I love changing it up now and then. Like making Betty Crocker Funfetti Cake Mix Cookies.

With valentine’s Day coming up, I’m thinking pink, I’m craving strawberry and I want sweet treats! This Strawberry Chocolate Chip Cookies recipe combines all of that, into pink bites of heaven.

How to Make Strawberry Chocolate Chip Cookies

This simple strawberry cookies recipe takes only a few simple ingredients and is made with a box of cake ix! Here are the ingredients and the full printable recipe card is below.

  • strawberry cake mix
  • baking powder
  • large eggs
  • vegetable oil
  • 1vanilla extract
  • white chocolate chips (you can use semisweet chocolate chips if preferred)

To Make: Preheat oven to 350F. and line a large baking sheet with parchment paper.

In a large bowl, thoroughly mix together all the ingredients {but the chocolate chips} until you have a dough consistency and it’s all well-mixed.

Gently fold in 1-1/4 cups of the white chocolate chips, reserving some for the next step.

Drop rounded balls of dough (about 1 tbsp or 1 inch balls) onto your prepared baking sheet. If you’d like, place the reserved white chocolate chips on top of each cookie ball.

Bake for 10 minutes and allow to cool on baking sheet for a few minutes. Transfer cookies to a wire rack to cool completely.

You’ll notice that this recipe is made with strawberry cake mix, which is a moist and tasty cake mix. Yes, I use cake mixes, why not? It’s handy, convenient and a true time saver.

So if you have a cake mix in your pantry {which I’m sure you do}, you just have to try using it to make cookies!

Strawberry Chocolate Chip Cookies has that strawberry and vanilla taste – yet also white chocolate chips, which are pretty much one of my favourite indulgences – ever.

Looking through my dessert recipes here on My Organized Chaos, you’ll see white chocolate used a lot – guilty!

These cookies can be made in under 10 minutes, even with gathering all of the ingredients together.

Then, bake for just 10 minutes to keep that pink colour and prevent browning. My tip is to definitely use parchment paper to avoid that.

Also, don’t drop more than 1 tbsp of batter onto the sheet or you’ll have massive cookies that might not be of even cooking consistency. They spread while cooking!

Totally worth making, a sweet treat in less than a half hour.

  • 1 1/2 teaspoon vanilla extract
  • 1.5 cup white chocolate chips
