ingredients on a table to make Spice Cake Mix Cookies.
  • Spice Cake Mix – Has all the necessary flavors and spices (I like to use Betty Crocker or Duncan Hines). If you need to use a yellow cake mix or vanilla cake mix like we use in our Brownie Smores Pie, you can. Yet you’ll need more added cinnamon and spices to achieve a similar taste.
  • Vegetable Oil – You can also use canola oil if necessary in this cake mix cookie recipe. You can also substitute with melted butter or coconut oil if you prefer a slightly richer or different flavor.

Recipe Variations

  • You can use melted butter instead of the vegetable oil, it will actually give the cookies a slightly richer flavor. Just be sure it’s cooled before mixing.
  • The extra cinnamon and nutmeg really boost the flavor, but you can leave them out if you want a more subtle spice cookie.
  • For extra moisture and a hint of fruit sweetness, replace some of the oil with applesauce.
  • Swap out half the oil for pumpkin puree for a fall-inspired twist with an even deeper spice flavor for this spice cake mix recipe.
  • Optional Extras: Add in chopped nuts such as walnuts or pecans, or even chocolate chips.
  • Add a glaze topping or cream cheese frosting on top of each cooled cookie for added taste.

Tips for Success

  • Chill the dough before baking
If you have the time and want to, give the dough a quick chill in the fridge for about 30 minutes. It’ll help prevent the cookies from spreading too much in the oven and makes for thicker, chewier cookies with a better overall texture.
  • Use parchment paper or a silicone mat
To avoid sticking and to get an even bake, line your baking sheet with parchment paper or a silicone mat. It not only makes cleanup easier but also helps the cookies brown evenly on the bottom.
  • Don’t overbake
Spice cake mix cookies can go from perfectly chewy to dry if left in too long. Bake until the edges are set and slightly golden but the centers still look a bit soft—they’ll firm up as they cool.
