Tips for Success

  • Do not overcook the pork: Pork chops are safe to eat at 145°F internal temperature. Use a meat thermometer to check, and pull them from the oven when they reach 140°F since they will continue cooking as they rest.
  • Let the pork rest before serving: After removing from the oven, let the pork chops rest for 5 minutes. This allows the juices to redistribute throughout the meat instead of running all over your cutting board.

  • Pork Chops: I use boneless pork chops for this recipe, yet you can use bone-in pork chops if you want.
  • French Onion Dip: You’ll want the liquid container, not the onion soup mix dry packet.
  • Sour Cream: Used in the sauce, and you can use whatever % of sour cream you’d like.
  • Packet Brown Gravy Mix: This adds flavour, just like the beef broth would in a bowl of french onion soup. Alternately, you can use our Homemade Onion Soup Mix recipe.
  • Mozzarella Cheese: I always have shredded mozzarella cheese on hand. Yet you can use another bold cheese if you’d like. I go over that more in the recipe FAQ’s below.
  • Salt and Pepper: Sprinkled onto the pork chops, for taste.

Recipe Variations and Substitutions

  • Cheese Options: While I use mozzarella cheese for convenience and because it’s a budget-friendly option. Yet you can use Gruyere for that traditional and authentic French onion flavor. You can also use sSwiss cheese, provolone, or even white cheddar.
  • Add-Ins and Extras: Stir in a tablespoon of balsamic vinegar with the topping for depth, add minced garlic along with the onions for extra savory flavor, include sliced mushrooms with the onions for an earthier dish, splash in 1/4 cup of dry white wine before adding broth, or mix in a teaspoon of Dijon mustard for tanginess.

Yes, you can assemble the entire dish earlier in the day and refrigerate for up to 4 hours before baking. Just add 5-10 extra minutes to the baking time if starting from cold.

Why are my pork chops dry?

Dry pork chops usually result from overcooking. Pork is safe at 145°F via an instant read thermometer, and will continue cooking after you remove it from the oven. Make sure you are not leaving them in the oven too long. Also, baking pork chops in a mixture like this recipe does, helps a lot too. The secret to making tender pork chops, is to cook them with plenty of liquid to hold in that moisture.

Can I double this recipe?

Yes, you will just need a larger baking dish or two separate dishes to accommodate all the pork chops and onions.

Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hour
Servings: 6
Course: Main Dishes
Cuisine: American
Author: Tammi

Ingredients

  • 6-8 Boneless Center Cut Pork Chops (cut approximately 1 ½ inches thick)
  • 1 Cup French Onion Dip (I used Heluva Good Dip brand)
  • 1 Cup Sour Cream
  • 1 oz Packet Brown Gravy Mix
  • 1 cup Mozzarella Cheese (shredded)
  • 1 ½ cups French-fried Onions
  • Salt and Pepper (to taste)

Instructions

  • Preheat oven to 375 degrees F. and prepare a 9×13-inch baking dish with cooking spray.
  • Place pork chops in baking dish and lightly season with salt and pepper.
  • In a small bowl combine French onion dip, sour cream and brown gravy mix.
  • Spread mixture evenly over pork chops.
  • Top with mozzarella cheese and French-fried onions.
  • Bake 40-50 minutes or until pork chops reach an internal temp of 145 degrees.

Notes

  • Make sure to use the French onion dip found in the refrigerated section of the grocery store. The shelf-stable variety does not come out the same.
  • If using thin cut pork chops instead of thick cut, be sure to reduce cooking time. I would suggest checking their internal temp at 30 minutes.
  • Store leftovers in the fridge in an airtight container for up to 4 days.

  1. This was delicious!! I only had a tub of sour cream, but mixed it with a tiny amount of onion dip that I had left and a heavy hand of onion powder and garlic powder too! Shredded my own mild cheddar and also went heavy with that as well! Used a whole small tub of french’s fried onions on top and they were perfect! We used 2 4 packs of porkchops and my husband is looking forward to left overs! 😋

  2. Whenever I make a dish with the french fried onions; I place them on top the last 10 min or til just browned to crisp them up a bit. The sour cream CAN be replaced
with cream cheese; I would have a room temperature or microwave til soft so you can stir and mix it in with the french onion dip and brown gravy mix. cream cheese and sour cream are good substitutes for each other

  3. The french fried onions, placed on last, seemed to get too over done/brown. May try adding halfway thru baking. Also, can cream cheese replace the sour cream (not a fan of)? Yummy recipe

  4. Can’t wait to make this recipe because we love “Heluva Good French Onion Dip and also use French Fried Onions often with other recipes. But 1 1/2 thick pork chops seem big – like a stuffing chop! Is this correct? Also, is water added to the packet of the brown gravy mix? Thanks for a yummy sounding recipe!!
