Since the seasons are changing, it’s time to add more slow cooker recipes into my favourites collection.

With back to school approaching and the schedule getting more hectic, it’s time to focus on easy dinners again.

Truth is, I can’t wait to get cozy with my favourite small appliance. You just can’t beat the ease and connivence of a crockpot.

In the chillier months and for years, our Chili Con Carne from the recipe box has been on rotation. Yet, one of my kids now isn’t the biggest fan of the many types of beans traditionally added to a chili recipes.

Plus after making it for so long, it was time for a change. I decided a good compromise was to make a white bean chicken chili, which calls for one type only – white beans.

It’s yet another fine example of the versatility of chicken.

Why I Love This Recipe

The following recipe is a hearty comfort meal with a signature taste that is quite amazing.

I’d compare it to a Mexican style white soup, thanks to the spice and add-ons. The best part is that everyone loved it, and could add their own personal preference of toppings.

Plus you can make this ahead of time, since it reheats so well.

This dump-and-go crockpot recipe results in tender chicken thanks to the low and slow cooking of 7 hours. Yet I’ve cooked this on high for 4 hours before as well, and the chicken is still perfectly tender.

So I love that you have two options when fitting this into your day: in the morning or at noon.

Either way, there’s no scrambling on what to make at dinnertime.

How To Make Chicken Chili

  1. Add 1 pound of boneless skinless chicken breasts to a slow cooker
  2. Top with salt, black pepper, oregano, chili powder, and cayenne pepper.
  3. Add in diced onion, garlic, white beans (or great northern beans), green chiles, corn and end with chicken stock.

  4. Cover and cook on low for 7-8 hours or High for 4 hours.
  5. Remove chicken to a plate and shred, then return the shredded chicken to the slow cooker

  6. Add cream cheese and lime juice (squeeze from some lime wedges)
  7. Cover and cook on high for another 10-15 minutes
  8. Serve with your favourite toppings, and enjoy!

Cooking Tips for White Chicken Chili

  • You can use skinless chicken thighs if preferred.
  • If you aren’t sure about the heat level of the full can of green chilies, add in half. Then taste when almost done and add more if you wish.
  • To thicken even more, add in a slurry. Simply mix 1 Tablespoon of cornstarch into 2-3 Tablespoons of whole milk, half and half, or chicken broth. Stir that mixture into the chili, and repeat if you’d like it even thicker.

  • Salsa Verde
  • Fresh cilantro
  • Green Onion

What to Serve with White Chicken Chili

The toppings just might be my favourite part, so I suggest provide as many as you can and go wild. Yet there are other white chili side dishes that pair fantastically.

Do you see how the toppings truly make this recipe? My preference would have been more heat and spice than the kids, so white chicken chili with salsa verde was the perfect addition for me.

Then the crunch of the tortilla strips and the cool tang of the sour cream? Incredible!

How To Store Easy White Chicken Chili

  • To Store. Store leftover chicken chili in an airtight container in the refrigerator for up to 5 days
  • To Freeze – If you plan to freeze this recipe, your last step would be shredding the chicken and placing back into the slow cooker. After freezing, thaw in the refrigerator and reheat on the stove over medium heat. Once hot, add in the cream cheese and complete the steps

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper

  • 1 540ml can white beans, drained and rinsed
  • 1 127ml can green chiies
  • 1 341ml can whole kernel corn
  • 1 900ml container chicken broth
  • 1 8oz cream cheese, softened
  • 1 lime, juice

Instructions

    1. Add chicken breasts to a slow cooker
    2. Top with salt, black pepper, oregano, chili powder, and cayenne pepper.
    3. Add in diced onion, garlic, white beans, green chiles, corn and end with chicken stock.
