It’s Spring Break here in Alberta, and we are immensely enjoying the slower pace of a less-filled schedule. There’s been movie nights {on a weekday!}, de-cluttering of rooms, and spontaneous trips to the pet store followed by me saying, ‘no, we can’t buy him‘ a few hundred times. 

Also on the agenda of no-schedule week? Lots of cooking and baking! I’m taking this time to re-stock the depleted freezer meals, breads and snacks. It’ll be nice to have these on hand when life isn’t so lazy.

One particular goodie that met my oven this week is Peanut Butter Maple Cookies.

This recipe is really simple to make, and I always have all the ingredients on hand to make these cookies. No special trips to the store!

It’s also a recipe that simply says, ‘combine all and mix’, which is the definition of easy when baking. 

Best of all – my little twin helpers got suited up and played a major part in the making and eating of these old fashioned peanut butter maple cookies. They did some mixing, forming of the balls and pressing with the fork.

Sure, it took a little longer than if I had done it myself. Plus, there was a little bit more of a mess too. But it was fun for us all.

There’s something special about spending a lazy afternoon making cookies with littles who think that this is the best spring break ever! … ok, it’s actually their first spring break ever, but that doesn’t matter.

What does matter is letting go of the chaos and snacking on cookies and milk right before dinner. This might be a new spring break tradition!

  • Butter – use softened butter. I use unsalted butter yet if you are using salted butter, omit the added salt.
  • Light Brown Sugar – make sure it’s packed brown sugar when you measure it out.
  • Quick-Cooking Oats – quick oats are best for this recipe.

  • I use regular peanut butter for this recipe. Natural peanut butter can be used. yet the texture and how it holds up will be different.
  • There is no need to chill the dough for this easy peanut butter maple cookies recipe.
  • Use regular or pure maple syrup.


 How to Make Peanut Butter Maple Cookies

  1. Preheat your oven to at 325°.
  2. In a large mixing bowl, cream the butter, peanut butter and sugars together. Add the eggs, one at a time, beating well after each one.
  3. Beat in the syrup and vanilla. Then combine the flour, oats, baking powder, baking soda and salt; add to the creamed mixture
  4. Gently stir in peanut butter chips into the cookie dough.
  5. Drop by heaping tablespoonfuls 2 inches apart onto an ungreased baking sheet. Press down and add fork marks, then place into the preheated oven.
  6. Bake for 15-18 minutes or until golden brown.
  7. Cool for 1 minute before removing to a wire rack to cool completely. Enjoy!

Storage

Store these cookies in an airtight container for up to 5 days. You can store them in the fridge or at room temperature.

  • 1 cup butter (softened)

  3. Made these last week! They were different – wasn’t sure on the shaping or how they’d stay together, but they formed pretty nicely. Gotta say that 2″ balls make some very big cookies (only a dozen) so I’d make them smaller next time. I can taste the maple a little, as they’re not super peanut buttery in flavour, but it’s not quite strong enough for my likes. I’ll see if I can up the syrup and cut out some sugar and supplement with flour or something and see how it goes. My favourite part, though, was just one bowl! That was great!
