There are few things I enjoy about the transition from Summer to Fall and Winter, yet at the top of my list is using the slow cooker more often.
This handy sidekick is the highlight of the season and one of my all-time favourite small appliances.
When cold winds blow there is nothing like comfort meals this time of year.
Yet, said comfort meals generally take more time to prepare and cook yet we all know that we are not allotted more time in our day to accommodate.
My schedule is still as busy as ever, plus it takes more time to travel to activities in this season, so it’s almost like I have less time in my day.
So, where does one find the solution to having those comfort foods in such a busy schedule?
That’s right, my best friend – the slow cooker.
So much can be said for having a meal ready for you, when you get home.
Walking in the door to the aroma of dinner waiting for you – is something special {kinda like clean sheet day}.

There is most likely slow cooker recipes for any meal out there.
Once you dig in, you’ll discover a whole world of possibilities when it comes to the convenience of this cooking method.

Making my own soups never used to be appealing, why bother when it comes in a can?
Yet, from the first time I made my own soup and tasted that fresh and hearty goodness, I was hooked.
This crockpot potato soup is one that made me fall in love with making my own.
Now, it’s become one of my favourite meals to make in the crock pot.
Hot soup with a creamy texture waiting for you when coming in from shovelling on a cold day? Yes, please!

How to Make Loaded Baked Potato Soup
This easy recipe for loaded potato soup uses simple ingredients which I had on hand, took very little time to prepare.
Within the first 30 minutes in the slow cooker, my house was filled with the fantastic smell of this soup.
The result? Simply amazing!
Ingredients Required
- bacon
- onion
- all purpose flour
- 25%-less-sodium chicken broth
- russet potatoes (sub yukon gold potatoes if you want)
- sharp cheddar cheese
- skim milk (or heavy cream)
- sour cream
- green onions
- black pepper, if desired
How to Make Loaded Potato Soup
- Cook and stir bacon in large skillet on medium heat until crisp and set aside on a paper towel to soak up grease.
Add onions to bacon drippings in skillet and cook until crisp-tender. Stir in flour and cook; then add in the chicken stock until it boil and thickens.
Pour into slow cooker then stir in the remaining broth and potatoes.
Cover and cook on low heat for 8 to 10 hours (or high 5 to 6 hours). - Using a slotted spoon, take out and mash potatoes with a potato masher until smooth.
You can also just use an immersion blender and blend right in the crockpot.
Add cheese to the slow cooker and stir until melted.
Then add back in the mashed potatoes and milk; cook, covered, 5 min. or until heated through. - Serve soup with your favorite toppings such as: crispy bacon, remaining cheese, a dollop of sour cream and chives.

Can I freeze Potato Soup?
Yes, without the toppings, freeze this soup in an airtight container or freezer bags for up to 3-4 months.
To reheat, allow to defrost completely and reheat until hot.

Slow-Cooker Loaded Baked Potato Soup
Ingredients
- 8 slices bacon (chopped)
- 1 onion (finely chopped)
- 2 Tbsp flour
- 1 carton 25%-less-sodium chicken broth (1 L, divided)
- 3 large baking potatoes (1.4 kg, about 6, peeled, cut into 1/2-inch cubes)
- 2 cups Kraft Double Cheddar Light Shredded Cheese (divided)
- 1/2 cup skim milk
- 1/2 cup light sour cream
- 1/4 chopped cup fresh chives
Instructions
- Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels; refrigerate until ready to use. Add onions to drippings in skillet; cook and stir 5 min. or until crisp-tender. Stir in flour; cook and stir 1 min. Add 1 cup broth; cook and stir 2 min. or until sauce comes to boil and thickens. Pour into slow cooker. Stir in remaining broth and potatoes; cover with lid. Cook on LOW 8 to 10 hours (or HIGH 5 to 6 hours).
- Use slotted spoon to transfer 4 cups potatoes to medium bowl; mash until smooth. Add 1-1/2 cups cheese to remaining mixture in slow cooker; stir until melted. Stir in mashed potatoes and milk; cook, covered, 5 min. or until heated through.
- Place cooked bacon on paper towel-covered microwaveable plate. Microwave on HIGH 20 to 30 sec. or until heated through. Serve soup topped with bacon, remaining cheese, sour cream and chives.
