When making a recipe to really wow everyone, I oftentimes think of different spins on the classic favourites.
In other words, little touches that bring a meal to a whole new level, yet not so totally out there that I risk it being a total flop. Case and point – classic french toast.
Three cheers for french toast! It’s one of the most delicious and indulgent breakfast ideas out there.

Yet it’s a recipe you’ll crave any day and might not make regular french toast again.

How to Make Stuffed French Toast
In a medium bowl, combine the cream cheese and preserves.
Mix well to ensure cream cheese doesn’t have any chunks left which can be done in a hand mixer (or stand mixer with the paddle attachment), or with just a fork.
Add the chopped strawberries to the mixture, mix and set aside.
In a large shallow baking dish, add eggs, milk, cinnamon, and vanilla. Whisk well to combine; set aside.
Using a bread knife, cut bread into thick slices (2 inch slices). Taking each slice, cut a deep slit across the top of the middle of each slice, approximately 3-4 inches long.
This will be the pocket the filling goes into. Think, french toast sandwich.
Careful not to cut through the bread. Repeat for all slices; set aside.
Taking one slice of bread at a time, scoop about 2 tbsp of cream cheese mixture into the pocket and press them closed. Set aside each slice and repeat for remaining slices.
In a large nonstick skillet or electric griddle, add a couple dollops of butter and melt over medium/high heat.
Dip one bread into the egg mixture at a time, turning over to coat both sides. Set into skillet. Repeat for next bread and pan fry 2-3 in the skillet at a time.
Cook each for 2-3 minutes on medium heat, or until crisped and browned. Flip bread over and cook for 1-2 minutes on the other side. Remove and set aside.
Repeat until all french toast is cooked and is golden brown on the outside.

To Serve:
Serve french toast hot, and sprinkle with your favorite toppings. We love powdered/icing sugar sprinkled on top, with additional strawberries on the side.
You can also drizzle with maple syrup, strawberry syrup, or honey. Other topping could be whipped cream and peanut butter.
The same topping options as for our Oat Flour Pancakes.
Recipe Variations
- Substitute the strawberries with other fresh fruit or fresh berries. Or use a combination. Our other favourites are bananas and raspberries.
- You can use a custard instead of cream cheese.
Make Ahead, Storage, Reheating & Freezing
- Make Ahead: The filling can be made ahead of time and refrigerated, and made the next day. Just make sure to bring it to room temperature and give it a good mix before filling.
- Storage: Store leftovers in the refrigerator in an airtight container for up to 5 days.
- Reheat: For best results, reheat in a skillet. You can also use the oven or an Air Fryer to reheat. The texture won’t be the same as made fresh though.
- Freezing: Unfortunately, I do not recommend freezing this recipe.

Strawberry Stuffed French Toast

- ½ pkg strawberries (hulled and roughly chopped)

- 2 tbsp strawberry preserves {jelly works fine as well}
- 3 eggs

- 1 tsp cinnamon
- 1 tsp vanilla
- butter
- powdered/icing sugar (as desired)
