Ingredients
- 1 box spice cake mix
- 2 large eggs
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
For the Cinnamon Sugar Topping
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
- Make the cinnamon sugar topping: In a small bowl, stir together the granulated sugar and cinnamon until well combined. Set aside.
- Mix the dough: In a large mixing bowl, combine the cake mix, eggs, oil, vanilla, cinnamon, and nutmeg. Stir together until a thick dough forms.
- Scoop and coat: Use a tablespoon or small cookie scoop to portion the dough. Roll each dough ball in the cinnamon sugar mixture until fully coated.
- Bake: Place the coated dough balls on your prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are set and the tops no longer look glossy.
- Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
