Spice Cake Mix Cookies is made with a box of spice cake mix for most delicious soft cookies. Ready in under 30 minutes - they are perfect for fall and holiday cookie swaps.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
Make the cinnamon sugar topping: In a small bowl, stir together the granulated sugar and cinnamon until well combined. Set aside.
Mix the dough: In a large mixing bowl, combine the cake mix, eggs, oil, vanilla, cinnamon, and nutmeg. Stir together until a thick dough forms.
Scoop and coat: Use a tablespoon or small cookie scoop to portion the dough. Roll each dough ball in the cinnamon sugar mixture until fully coated.
Bake: Place the coated dough balls on your prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are set and the tops no longer look glossy.
Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
