Ingredients and Notes

These are the simple ingredients needed to make this delicious bread recipe, along with notes on substitutions. As always, the full recipe is on the printable recipe card at the end of the post.

  • Self Rising Flour – If you don’t have any self rising flour on hand, make your own by combining 2 cups all purpose flour with 2 teaspoons baking powder.
  • Granulated Sugar – The granulated sugar could be substituted with 1 cup brown sugar, or a combination of 1/2 cup granulated sugar and 1/2 cup brown sugar.  Using brown sugar will give the banana bread a slightly more caramel taste.
  • Overripe Bananas – Be sure to use the ripest bananas you have on hand. Yet note, the riper the bananas, the more intense and sweeter the flavor will be.
  • Milk – Full fat milk (whole milk) was used in this recipe.  Lower fat and non-dairy varieties could also be used, yet may may alter the flavor and texture of the banana bread.
  • Melted Butter – Salted butter was used in this recipe.  This can be substituted with unsalted butter.  If using unsalted butter consider adding 1/2 teaspoon of salt to the batter.  A mild flavored oil could also be used in place of the butter.
  • Eggs – Large sized eggs were used in this recipe.
  • Vanilla Extract – The vanilla extract can be substituted with vanilla essence.
  • Nutella – The Nutella brand of hazelnut spread tastes best in this recipe, but other varieties could also be used. You can even use Homemade Nutella, or swap it for peanut butter.

How to Make Nutella Banana Bread

Unlike other breads, banana bread is famous for being a soft and moist bread that doesn’t need yeast or rising time.

With no fuss; it’s a mix, dump and bake bread. I think we can all agree that we love banana bread for that.

Here are the easy steps:

  1. Preheat the oven to 320°F.  Grease a loaf tin with non-stick cooking spray or line with parchment paper.  Set aside.

  2. Into a large mixing bowl, add the self rising flour and granulated sugar. Mix until well combined and set aside.

  3. To another large bowl, add the mashed bananas, milk, melted butter, eggs and vanilla extract. Stir until well combined. Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined.

  4. Pour half of the batter into the prepared loaf pan. Soften the Nutella in the microwave for 20 seconds, then spoon half of the Nutella on top of the batter. Swirl gently with a butter knife or skewer. Top with the remaining batter, then spoon over the remaining Nutella and swirl through once again.

  5. Bake in the oven for 60 minutes, or until the top is golden brown and the middle is just cooked through. It’s done when an inserted toothpick into the middle comes out clean.

Allow to cool in the tin for 10 minutes before turning out onto a wire rack and allowing to cool completely, about another 10 minutes.

  6. Slice and enjoy!

Tips for the Best Banana Bread

  • Don’t over-mix the batter. One of the best tricks to getting tender and soft quick breads is to not over-mix the batter. Doing so will toughen the bread, because the gluten develops more.
  • Don’t over-swirl. Be careful not to over-swirl, because taht is over-handling the batter too much as stated above.
  • Use ripe bananas. The riper the bananas, the sweeter and more flavourful they are. So make sure to use ripe bananas, and not less than the stated amount or your bread won’t be as moist.
  • Don’t overbake. Once the top of the loaf looks done, start checking the inside with a toothpick. You don’t want to overcook the banana bread and it be crumbly and dry.
  • Allow to cool. I know, I’m a fun-suck for anyone that loves hot freshly baked goods. Yet you must allow it to cool and settle a bit, or else it’ll start to flop and crumble when cut.

How to Ripen Bananas Quickly

Not having ripe bananas isn’t an issue I have often, yet sometimes I just need one more to ripen, and there’s no time to allow it to do so naturally.

Ripen in 1-3 Days: Place bananas in a brown paper bag.

Ripen in 1 Hour: Place unpeeled bananas on a baking sheet covered with aluminum foil or parchment paper. Bake at 300 degrees for 15 minutes or until the skins are black. Cool, peel, and squeeze out the now ripened bananas.

How to Store

Moist nutella banana bread can be stored an airtight container at room temperature for up to 3 days. You can also wrap it tightly in aluminum foil or plastic wrap.

How to Freeze

Nutella banana bread is such a great recipe to make ahead of time, freeze, and have on hand for whenever the craving hits.

To freeze, allow it to cool completely and then wrap the entire loaf (or individual slices) really well with either plastic wrap or aluminum foil. I use 2-3 layers of either.

Nutella banana bread can be frozen for up to 3 months. Then, just thaw at room temperature before enjoying.

Sometimes when serving banana bread for brunch, you’d like other side dishes that go well with it. Here are some suggestions:

  • Coffee or Tea
  • Fresh Fruit
  • Dark Chocolate
  • Nuts
  • Ice Cream
