Ingredients Required

As always, the full recipe for this easy dinner recipe is on the printable recipe card at the end of this post.

  • Cooked Shredded Chicken – Precooked chicken makes this casserole easy to prepare. I like to use rotisserie chicken or leftover chicken. You could also shred 2-3 cooked chicken breast, to make around 3 cups of cooked chicken. Canned chicken can also be used.
  • Cream of Chicken Soup – Condensed soup acts as a base for the casserole and adds creaminess.
  • Diced Tomatoes – I like to use a can of rotel tomatoes or a variety that has green chiles in it.
  • Mexican Style Corn – Mexican corn has peppers added for an extra pop of color and added sweetness.  A regular can of whole kernel corn, drained, could be substituted for Mexican style is desired.
  • Sour Cream – Sour cream adds creaminess and a little zing to the casserole.  Unflavored Greek yogurt could be used in place of sour cream if desired.
  • Shredded Cheddar Cheese – This recipe uses mild cheddar, but any good melting cheese would work.  American, Monterey Jack, or Mexican blend cheese could be substituted.
  • Seasoning – This recipe calls for cayenne pepper, salt, black pepper, garlic powder, and paprika. This casserole has a pleasant amount of heat but is not overly spicy.  Add additional cayenne or paprika for additional heat if desired.
  • Doritos – Coarsely crush chips right in the bag for easy prep, a 9 ounces bag (approx 235g bag of doritos) makes about 3 cups of crushed chips. Of course you can use any nacho cheese tortilla chips brand you wish.
  • Topping – Optional yet recommended, add a dollop of sour cream or chopped green onions when serving.

What Doritos Flavor Should I Use?

I love the original nacho cheese Doritos, but you can use other flavor os Dorito chips for this recipe. If you love spicy flavors, try Spicy Nacho Doritos. If you prefer a mild taste, try Cool Ranch Doritos.

How to Make Doritos Chicken Casserole

  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl add the first 11 ingredients, all except the chips, stir until well combined.

  3. Spread mixture into a 9×13 inch dish or similar sized baking dish.

  4. Crush tortilla chips in bag, making 2 ½ to 3 cups of topping, sprinkle chips evenly over the top of the casserole. Cover dish with foil and place into the preheated oven.

  5. Bake casserole for 35 minutes. Remove foil and bake an additional 5 minutes.

  6. Remove casserole from oven, serve warm.

What To Serve with Dortios Casserole

This casserole recipe is great on it’s own as a complete meal. Don’t forget that it can be garnished with many toppings of your liking such as:

  • Sour cream
  • Diced green onion
  • Sliced jalapeno, fresh or pickled
  • Diced avocado
  • Minced cilantro
  • Diced tomatoes or salsa

If you do want a side dish for this cheesy dorito chicken casserole, I’d choose a simple tossed salad or green salad, vegetable, refried beans, or Mexican Rice for a complete meal.

Storage Tips

Storing Leftovers

Leftover casserole can be stored in the refrigerator in an airtight container (or covered with aluminum foil or plastic wrap) for up to 7 days.

Reheating

To reheat, place portion in an oven safe dish, cover, and warm at 300 degrees for 20-25 minutes or until heated through.  Microwave portion for 2-3 minutes, until bubbly and heated through.

Make Ahead Instructions

Casserole can be made in advance and stored covered in the refrigerator for up to 24 hours.  I personally would assemble all but the chips though, in case they get soggy.

When it’s time to cook, allow to sit at room temperature for an hour.  Top with crushed chips and bake covered for 45 minutes then removed foil and bake for another 5 minutes. Serve.
