Easy Apple Muffins

I made these Apple Cinnamon Streusel Muffins since on occasion I love to send muffins to school. It’s all in the name of variety!

Plus, I wanted to have a new recipe in my mix of favourites.

Turns out not only is Apple Cinnamon Streusel Muffins easy to make, but it’s also a recipe that I can make and freeze in batches. Score!

These delicious muffins use an Oatmeal Muffin Mix as a base, with some tasty ingredients to jazz it up into the best muffins there is.

The kids will love these as much as you will when paired with your morning cup of coffee. I wouldn’t be surprised if you grabbed another to have for an afternoon snack as well. The buttery streusel is addicting!

Ingredients Required

These tasty muffins takes simple ingredients to make, and you will see it’s not many. This easy recipe can be whipped up in no time at all.

  • All Purpose Flour
  • Granulated Sugar – part of the sweetness for the streusel ingredients
  • Unsalted Butter – make sure to use room temperature
  • Rice Krispies – makes that crispy streusel
  • Oatmeal Muffin Mix, batter prepared
  • Ground Cinnamon – for taste
  • Red Delicious Apples

How to Make This Muffin Recipe

Preheat you oven and oven and make sure the rack is in the middle. Line a muffin pan with papers or use a non-stick canola spray. Set the muffin tin aside.

Start by making the streusel: Add flour, sugar, butter and cinnamon in a medium bowl. Combine using a fork or a pastry cutter until it resembles coarse crumbs.

Add the Rice Krispies and combine together using fingertips. Set aside.

Prepare the muffin mix according to package directions for making 1/2 the package. Fold in the chopped apple when batter is ready.

Scoop batter into the prepared muffin cups. Divide the cinnamon sugar streusel evenly over top of the batter.

These apple muffins have a bake time of 18-22 minutes. For best results, they are done when an inserted fork comes clean and they are golden brown.

Cool completely before removing from muffin pan and placing on a wire rack.

Storage

These apple cinnamon muffins should be stored in an airtight container at room temperature for up to 4 days.

You can also freeze muffins by placing them on a baking sheet and freezing for 1 hour until frozen. Then transfer into a freezer safe bag and freeze for up to 2 months. To serve, allow to defrost overnight or reheat the muffins slightly in the microwave.

  • 1/4 Cup All-Purpose White Flour
  • 2 tbsp Granulated Sugar
  • 2 tbsp Unsalted Butter, room temperature
  • 1/2 cup Rice Krispies
  • 1/2 package Oatmeal Muffin Mix, batter prepared
  • 1/2 Red Delicious Apple, diced
  • 2 tsp Ground Cinnamon

Instructions

  1. Preheat oven to 400°F (200°C) and set rack to center. Line a muffin pan with papers or spray with non-stick canola oil spray; set aside.
  2. For the streusel, combine flour, sugar, butter and cinnamon using a fork until it resembles coarse crumbs. Add the Rice Krispies and combine together using fingertips. Set aside.
  3. Prepare the muffin mix according to package directions for making 1/2 the package. Fold in the diced apple when batter is ready.
  4. Divide batter evenly amongst 12 prepared muffin cups.
  5. Divide the streusel evenly over top of the muffins.
  6. Bake in center of oven for 18-22 minutes. Cool completely before removing from muffin pan.
