While fruit dessert may have you thinking ‘summer’, since this one does have cake and cream cheese – it’s so perfect for the upcoming Fall season.

I love that you can distinctly taste the peaches and cream cheese, yet also that classic vanilla flavour.

This recipe really makes the ingredients shine.

I do use Mexican Vanilla Extract in all my baking, I think it’s far superior to any other. You can of course use any vanilla extract, yet I do suggest you get some from Mexico the next time you go or know someone that does.

Since I use mine a lot, I always stock up each time we travel and I’ve been know to say, “oh, get me some vanilla!” to family and friends.

Peaches and Cream Bars Recipe – It’s a dessert of fruit + white cake + cream cheese marriage that is sheer bliss!

Ingredients 

  • 1 box white cake mix
  • 1/3 cup butter (softened)
  • 2 eggs
  • 1 large can peaches (diced OR 4-5 fresh peaches, diced)
  • 8 oz Cream Cheese
  • 1/2 cup sugar
  • 2 tsp Vanilla

Instructions

  • Preheat oven to 350
  • In a bowl, combine the cake mix, 1 egg and butter and mix with a fork until it resembles crumbs. Set aside 1 1/3 cup of the crumbs
  • Press the remaining crumbs into a 9×9 greased pan and bake for 10 minutes {this will be the bottom crust}
  • While the crust is baking, dice peaches if you haven’t already
  • When the crust is cooked, spoon the peaches on top of the warm crust
  • Using a mixer – combine cream cheese, sugar, 1 eggs and vanilla and beat until creamy
  • Spread cream cheese mixture over the peaches and sprinkle the reserved crumbs on top
  • Bake for 32 minutes and let it cool before serving. I let it sit on the counter for 20 minutes to cool, then place in the fridge for a couple hours before serving.
