Those that don’t have a BBQ can still try this recipe that hits all the notes when it comes to taste. Simply use an indoor grill, griddle, or oven bake.

This chili lime chicken recipe is easy and delicious, and a wonderful kickoff to summer grilling season. It simply must be tried for your next family meal, outdoor event or any backyard barbecues.

The Best Chicken Marinade

The first step is to make the best sweet chili-lime marinade. In a small bowl combine the sweet thai chili sauce, low sodium soy sauce and fresh lime juice from two fresh limes.

Just a Few Simple Ingredients

  • boneless skinless chicken breasts
  • sweet Thai chili sauce
  • low sodium soy sauce
  • fresh limes
  • chopped green onions

Place the boneless skinless chicken breasts into a large ziplock bag. Reserve 1/4 cup marinade for later, and pour in the rest of this easy 3 ingredient marinade.

Seal the bag, and refrigerate for at least 1 hour. Seriously. Meal prep could not be easier than this.

You can make this ahead of time, and start marinading the night before. The ideal marinating time for this recipe with such zesty flavors, is 1-8 hours.

How to Make Sweet Chili Lime Grilled Chicken

Once your chicken has been marinating for at least 1 hour, it’s time to grill. Heat grill to medium-high heat, and oil grates with olive oil or vegetable oil.

You can use non-stick cooking spray, yet please spray before heating. You don’t want to be spraying near open flame.

Place chicken breast on the heated grill grate, and cook for about 7 minutes per side on indirect heat.

It’ll be done when the internal temperature reaches 165 degrees Fahrenheit when a meat thermometer is inserted into the thickest part of the breast.

Plate the cooked chicken and baste with reserved sweet chili lime glaze, to add a bit more flavor. I suggest you garnish this grilled sweet chili lime chicken with chopped green onions and lime wedges.

You can also garnish with fresh fresh cilantro, Italian parsley and/or sesame seeds if desired. I like to serve with sweet chili sauce for dipping, for those that love the taste and can’t get enough.

What Goes with Chili Lime Chicken

This grilled chicken recipe can be paired with almost any of your favourite sides.

I suggest the easy grilled chili lime chicken be served alongside white rice, brown rice, grilled corn on the cob, oven roasted red potatoes and even classic potato salad.

Storage and Leftovers

Place leftovers into an airtight container or cover with plastic wrap and refrigerate for up to 5 days.

Whether it’s the first day or the next day, this chicken would be great topped on our BBQ Chicken Salad or any salad for that matter.

You can also use this chicken for burritos and wraps, and sandwiches. This chicken makes the best leftovers, its one of the best things about making it.

Variations on Sweet Chili Lime Grilled Chicken

It’s so important to note that this sweet chili chicken recipe is as versatile as chicken itself. No, you do not have to cook chicken breasts for success. This creative grilled chicken recipe has a few more tricks.

You can use this chili lime marinade for boneless skinless chicken thighs, or even make sweet chili lime chicken wings. They will be the tastiest wings at your next gathering I’m certain.

As well, why not try sweet chilli and lime chicken skewers. Simply alternate the already marinated chicken pieces with your favourite chopped vegetables onto wooden skewers.

Sweet Chili Lime Grilled Chicken

This SWEET CHILI LIME GRILLED CHICKEN recipe has the most delicious flavor, and is an easy marinated chicken recipe. Taking less than 30 minutes to grill, it will be one of the best grilled chicken recipes you'll make this summer.

Ingredients

  • 4 boneless skinless chicken breasts
  • 3/4 cup sweet chili sauce
  • 1/3 cup low sodium soy sauce
  • juice from 2 fresh limes
  • olive oil, for grill grates
  • chopped green onions, for garnish
  • lime wedges, for serving

Instructions

  1. In a small bowl, mix together the sweet chili sauce, soy sauce and the juice from the limes. This is the marinade. Set aside 1/4 of the marinade, for later.
  2. Place the chicken into a large ziplock bag and add in the marinade (not the reserve). Toss to coat and refrigerate for at least 1 hour (up to overnight or 8 hours).
  3. Oil your grill grates and heat grill to medium high. Place marinated chicken on the hot grill and cook for 7 minutes. Turn and cook for another 7 minutes. Cook time may vary, it's done when the internal temperature reads 165 degrees Fahrenheit.
  4. Plate cooked chicken and baste with reserved marinade. Garnish with green onions and lime wedges. if desired. Not required yet option is parsley and/or sesame seeds for garnish as well.

Notes

  • Store leftovers in an airtight container for up to 4 days.
  • Marinade can be sued on other cuts of chicken, or even chicken skewers.
