1large can peachesdiced OR 4-5 fresh peaches, diced
8ozCream Cheese
1/2cupsugar
2tspVanilla
Instructions
Preheat oven to 350
In a bowl, combine the cake mix, 1 egg and butter and mix with a fork until it resembles crumbs. Set aside 1 1/3 cup of the crumbs
Press the remaining crumbs into a 9x9 greased pan and bake for 10 minutes {this will be the bottom crust}
While the crust is baking, dice peaches if you haven't already
When the crust is cooked, spoon the peaches on top of the warm crust
Using a mixer - combine cream cheese, sugar, 1 eggs and vanilla and beat until creamy
Spread cream cheese mixture over the peaches and sprinkle the reserved crumbs on top
Bake for 32 minutes and let it cool before serving. I let it sit on the counter for 20 minutes to cool, then place in the fridge for a couple hours before serving.
