When my fabulous and talented group and foodie bloggers and I settled on a ‘Chili’ theme for this weeks recipe, I had to stifle a laugh. Could I really make Chili again after ‘the incident’?!
Still fresh in memory and most likely still evidence throughout, I wasn’t sure I wanted to go that route again.
That is until we had another week of -40 weather {shaking fists at the sky} and hubby asking, ‘Think we could have Chili tonight?’ … YES! While I could have made my Taco Chili, I was craving the comforting original that made me fall in love with the dish in the first place.
I make this in the slow cooker, but in reality that is for convenience. If you’d rather it be done quicker, cook on the stove top until beans are soft and enjoy!

Fact is, I didn’t have a physical recipe for the Classic Chili con Carne that I have been making for 20 years.
I first learned in the cooking portion of Home Economics class in Junior High and have made it by memory since then after altering it through the years, to taste.
It’s one of those recipes that I could make in my sleep. A no fail, tried and true comfort meal that is full of veggies and beans.
It was about time I put my recipe to paper and be added to the Recipe Box, perhaps one day my kids will want to make Mom’s Classic Chili con Carne and hopefully get a dose of karma with their own clumsy kids {again, see ‘the incident’}.

Best Chili Con Carne Recipe Ever!

Note that this isn’t a spicy Chili, the kids don’t like a ton of spices so we have learned to add it to the end as preferred. So when done, add hot sauce/cayenne pepper/black pepper {and cheese} as desired.

Classic Chili con Carne
Ingredients
- 1/2 pounds ground beef
- 1 large onion (diced)
- 1 red bell pepper (diced)
- 1 green or yellow bell pepper (diced)
- 1 clove garlic (minced)
- 1 28 oz can diced tomatoes
- 1 16 oz can kidney beans
- 1 16 oz can beans with pork
- 1 16 oz can whole or sliced Mushrooms
- 1 tbsp chili powder
- 1 tbsp oregano
- 1 tsp cayenne
- Shredded cheese (as a topping)
- salt and pepper to taste
Instructions
- In a pan cook ground beef and onions until thoroughly cooked. Add spices to the last 1 minute of cooking.
- Add beef mixture and all the other ingredients to a slow cooker.
- Cook on low for 8 hours
- Enjoy!

This looks like the recipe my mom always made, except hers was always sans peppers, as I never liked them. I am now exploring some peppers in my mid 50’s, but if they can be omitted in recipes, I will. It’s been a slow turnaround, but I will now order take-out pizza with peppers and eat them.
Wow! I love your recipes and your pictures make me Love them even more! I have been searching the net for slow cooker recipes but now I know where to come to find a good one.LOL
It’s chili season around here! I’ve never made it with beans and pork thought. I’ll have to try that next time:)
