Beef Stroganoff
This simple and easy delicious Beef Stroganoff recipe is one of our family favourite ground beef recipe, and is a great under 30 minute meal.

Just like my recipes for the best meatloaf ever, and Salisbury Steak with Mushroom Gravy, this one is so quick to make! They both are so worth the highlight because it’s that loved by my family.
Truth is, one of the easiest meals that I have been making for too many years to count, is this delicious and easy recipe.
It’s the BEST beef stroganoff recipe ever!
Versus buying the kit or package varieties, making your own is an extremely simple ground beef recipe. Plus it just tastes so much better.
It’s like my Slow Cooker Baked Ziti recipe, or our Homemade Hamburger Helper. Simple and outstanding.
When after school activities have us running like mad, Beef Stroganoff is a meal that I can start and have on the table in less than 30 minutes – making it a go-to for us, for years.

My kids aren’t the biggest fans of onions or mushrooms, yet as long as I chop them up small and allow them to fully cook into this dish, they surprisingly eat it without complaint.
It’s one of the few meals that I can make with these ingredients, where I don’t get a lot of moaning and groaning.
What is stroganoff sauce made of?
I think what makes this beef stroganoff recipe so very good, is the slight creamy comforting taste that is produced with the addition of just a bit of sour cream. Other than that, it’s a milk and cream of mushroom soup base. Yep, traditional and classic!

I love my collection of quick and easy recipes that I can have on the table in no time.
Yet it’s taken me forever to add this into my collection here at My Organized Chaos, because it’s actually so simple I thought it was a no-brainer of a feature.
Keep in mind, you can also substitute the ground beef for ground turkey too! I’ve made this recipe with turkey before, and it tastes just as good.
I haven’t yet tried it with ground pork or chicken, so if you do, I’m interested in hearing what you think.

Once you have the noodles cooked el dente, it’s a one pan meal to put together. I like to cook mine in a deep countertop skillet, because it offers the most room to stir and blend. When making small batches you could use a large frying pan.
I find cooking with little dishes to clean simply the best, sometimes it’s what you need to end the day off well.
Best of all, I’ve froze leftovers of this recipe before, and they’ve thawed nicely and re-heated beautifully.
Again, this is where cooking the noodles el dente comes in, so you don’t have mushy noodles upon re-heat.
Keep in mind, this does make quite the batch, so there’s no need to double the recipe if you’d like leftovers or want to freeze some. I always do one or the other depending on the other days menu.
And I think that is a lot of the charm about this recipe. Such little effort for more than one days worth of dinner!

You can also freeze individual servings of this easy beef stroganoff recipe for those nights that you need a single meal.
Keep in mind you might have to add a bit of milk to prevent re-heat drying, which can be common with this recipe. I find that a small dash of milk works perfectly.

Beef Stroganoff
Ingredients
- 1 lb ground Beef
- 400 g pasta (of choice)
- 1 medium onion (chopped, chopped)
- 2 cans sliced Mushrooms
- 2 cans Mushroom Soup
- 4 tbsp Sour Cream
- Salt and Pepper (as desired)
Instructions
- In a large pot or large skillet, brown the ground beef and add the onions and mushrooms mid-way through cooking.
- Meanwhile cook pasta according to package directions, until el dente.
- When the meat, onion and mushroom mixture is cooked, add cooked pasta and mushroom soup.
- Cook until desired temperature, stir in sour cream just before serving along with salt and pepper as desired.
- Enjoy!

This was delicious! Even my fussy 6 year old cleaned his plate. It was also easy to make! I will definitely make this again.
Most recipes always say to drain the meat – I hope this isn’t a silly question but do you drain the fat from the browned meat? Or leave it in?
If there’s a lot, I do drain – but usually I use lean so there isn’t much to worry about. 🙂
