Summer Lemon Squares

Whenever Spring and Summer arrives, I feel the need to bake a dessert that includes the fresh taste of Lemons. Easy to prepare and the ability to make the day before, this Lemon Squares recipe is great for outdoor entertaining or just a nice dessert for the family. Enjoy!

Summer Lemon Squares

An easy lemon dessert that is easy to prepare and great for outdoor entertaining or just a nice dessert for the family.

Ingredients 

  • 1 cup Graham Squares
  • 1/4 cup Margarine or Butter
  • 1/2 cup Flour
  • 1 pkg Light Cream Creese
  • 1/4 cup packed Brown Sugar
  • 1 cup Sugar
  • 2 Eggs
  • 2 tbsp Flour
  • 4 tbsp grated Lemon Peel
  • 1/4 cup Fresh Lemon Juice {squeezed from the lemons you just grated}
  • 1/4 tsp Baking Powder
  • 1 tsp Icing Sugar

Instructions

  • Preheat oven to 350°F.
  • Line 8" square pan with foil, allowing foil to extend beyond rim {just easier to remove that way}
  • Combine crumbs, 1/2 cup flour and brown sugar in a bpwl
  • Cut in margarine or butter with two knives until it resembles crumbs
  • Press mixture firmly into the bottom of the pan, and bake for 15 minutes {do not burn!}
  • Beat cream cheese and sugar on medium speed
  • Add eggs and 2 tbsp flour and mix well
  • Blend in the lemon peel, lemon juice and baking powder.
  • Pour mixture over the crust
  • Bake 25 minutes
  • Let cool completely then put into the fridge for at least 2 hours or even overnight.
  • To serve, cut into squares and sprinkle with icing sugar or some more lemon peel for garnish

I love the crust recipe too…coincidently, I was recently watching Anna Olsen’s new cooking show and she put flour in with the graham crumbs, she said it helped keep them from crumbling apart. I never before had heard about this. However, I didn’t catch the ratio of flour to crumbs so this is great. Thanks again Tammi.

  9. Ooooooooooooh thank you for this recipe! It is a hot day here in SK and I was looking for a nice cool dessert to make. This is perfect as I was craving something lemony for a while!
