No Way!
Anyone might be intimidated by a food that is stuffed and bacon wrapped, assuming it’s difficult and time consuming. This is actually one of the simplest recipes ever. Years later and it’s still the top easy dinner recipe.
It IS a mouthful of delicious rather! Yet then anything bacon wrapped is truly wrapped in love, don’t you think?

I used to just bake ordinary chicken breasts with spices, and now I have a new favourite. Someone claimed it was better than ones tried in restaurants, and since then it’s a recipe we love to make time and again.
This is a 3 ingredient recipe, which makes it even better. There’s not a bunch of steps to make this wonderful stuffed chicken that is also a low carb meal.
This bacon wrapped chicken is an oven recipe, and the bacon holds in the juicy chicken. No dry chicken with this recipe!

How to Make Bacon Wrapped Stuffed Chicken
This is such an easy recipe. You’ll need the following ingredients, and the full printable recipe card is below.
- boneless chicken breasts
- Spreadable Herb and Garlic Cream Cheese
- Salt and black pepper
- slices of bacon
To Make: The first step is to flatten chicken to 1/2″ thickness using a meat mallet on a flat surface. Spread 2-3 tablespoons cream cheese over each. Sprinkle with little salt and pepper.
Roll up and Wrap each with 2-3 slices of bacon, placing ends of the bacon seam side down on a rimmed baking sheet (or baking dish) that has been sprayed with olive oil.
Bake uncovered for 35-40 minutes, at 400°C or until the internal temperature reads that the chicken is cooked. If needed, Broil 6 for 5 minutes to get crispy bacon on the outside.

Best of all you can pick and choose your flavour of cream cheese to suit your preference. Herb and Garlic is what I like to use, but sometime when shopping, they didn’t have it as an option.
So, I have chosen another flavour from time to time and it’s always been delicious. It’s such a simple recipe, we love to enjoy this even if it’s not a busy weeknight. Yet recipes like these were made for weeknight meals, as they are made in no time.
As for sides to this stuffed chicken breast, the options are endless. Rice, potatoes, salad and seasonal vegetables – this is a meal that you can make all year long and will even make your picky eaters happy.

Guests will think you brought on the fancy recipe just for them. Don’t worry, I won’t say how easy it is – impress away!
The first time I made this my oldest said, “you can make this anytime“. My {picky} twin toddlers said nothing until they asked for seconds. The whole family couldn’t get enough of this delicious meal.

Ingredients
- 16 oz boneless skinless chicken breast halves
- Spreadable Herb and Garlic Cream Cheese ({or chive and onion flavor})
- Salt and pepper ( to taste)
- 8-10 bacon strips (raw)
Instructions
- Flatten chicken to 1/2" thickness
- Spread 2-3 tablespoons cream cheese over each. sprinkle with salt and pepper
- Roll up and Wrap each with 2-3 bacon strips, placing seam side down on a greased 13" x 9" baking pan
- Bake uncovered for 35-40 minutes, at 400°F. If needed, Broil 6 for 5 minutes to get the bacon crisp.
Notes

Though, I’m not sure about 400C… misprint? I made it 200C and it worked perfectly.
It turned out very good. My cream cheese oozed a bit but this was NOT a bad thing….the stuff that did ooze was all crispy on the outside and creamy on the inside. Mmmm

Although I love bacon it has to be real crispy so I usually do not use it for main dishes but this looks so good and you have never let me down in the taste department, we are going to try it! Actually, I’ve stuffed chops and tenderloin. (And chicken breasts). I usually smoke most everything, but they’re still very tasty done in the oven.

That is unfortunate. The walnuts are my favorite part in the stuffing because of the crunch. Can you substitute walnuts with soy nuts? That might work. But then, I wouldn’t take chances with allergies.
As for flavor though, the walnuts probably wouldn’t change much.
I’ll have to think up a substitue. So often I see a recipe that I want to try, and it has nuts in the ingredients. It’s hard to tell if it’s really ‘needed’ or not…
