One of my favourite sweet obsessions is tangy desserts. Think, lemon meringue and key lime pie. Mmmm!
I recently stumbled on a recipe for Key Lime Margarita Pie on the Kraft Canada website and I immediately bookmarked it. Not only was I impressed by the few ingredients {I’m a simple, no-fuss gal like that}, yet it’s also a really easy summer {frozen} dessert to make.
Verdict? I’m drooling just thinking about it!
The first thing you’ll notice about this recipe is the unique crust, unlike one that I usually make. It’s made with pretzels!
The kids walked into the kitchen while I was crushing the pretzels and were so confused as to what I was doing. My little baking-ninjas argued with me for quite some time, ‘that’s not for crust. really? there’s no way‘.
In the end, it makes for a great tasting crust, though it does fall apart somewhat. Yet, the salty and sweet flavour is perfection next to the tang of the key lime. I was impressed!
Also to note, you might have a hard time finding Kool-Aid Unsweetened Lemon-Lime Drink Mix, I rarely see those classic little envelopes in stores anymore. So, if you do see them, I suggest scooping a bunch up for later use. I did!
You do need to make Key Lime Margarita Pie ahead of time, as it needs to rest in the freezer for at least 6 hours before serving. Yet, that’s the beauty of this recipe though, since it’s the ideal frozen treat to have on a summer day.
My husband nailed it when he commented after that first bite, ‘it’s like lime ice cream‘ – since it tastes just like it. I used regular cool whip though you could use light to cut calories, yet when it tastes like ice cream without the calories of it – it’s a winner in my books.
So, bring on the regular cool whip and serve just as it’s starting to unthaw. You can thank me later. 😉

Key Lime Margarita Pie
Key Lime Margarita Pie is the ideal easy summer {frozen} dessert. Simple to make and tastes just like lime ice cream, without the excess calories.
Ingredients
- 1-1/4 cups crushed pretzels
- 1/4 cup sugar
- 6 Tbsp butter, melted
- 1 can sweetened condensed milk, 300 mL
- 1/2 cup lime juice
- 1 envelope Kool-Aid Unsweetened Lemon-Lime Drink Mix
- 3 cups thawed Cool Whip Whipped Topping, divided
Instructions
- Mix pretzel crumbs, sugar and butter; press onto bottom and up side of 9-inch pie plate. Refrigerate until ready to fill.
- Mix next 3 ingredients in large bowl. Whisk in 2-1/2 cups Cool Whip. Pour into crust.
- Freeze 6 hours. Remove from freezer 15 min. before serving; let stand at room temperature until slightly softened. Garnish with remaining Cool Whip.
Notes
MAKE IT EASY
For easy serving, dip pie plate into warm water, just to rim, for 30 seconds.
SPECIAL EXTRA
For stronger lime flavour, stir in 2 Tbsp. lime zest with the lime juice.
