These homemade chicken breakfast sausage patties calls for basic ingredients. Just some ground chicken and basic seasonings you’ll have in your spice drawer.

Yet here’s what you’ll need to make your own breakfast sausage:
- Lean Ground Chicken – This ground meat is packed with more protein and is lower in fat and calories than ground pork sausage patties.
- Onion – Gives flavor
- Chopped Apple – Any kind of apple will do, gives moisture and some natural sweetness.
- Breakfast sausage seasoning – I like to keep it simple with fresh parsley, kosher salt (or sea salt), black pepper and jarred minced garlic.
- Oil – I like to use olive oil, yet feel free to use Avocado oil if needed.
Fresh herbs are always best, yet use dried parsley flakes if you need to. Same with the garlic, you can use garlic powder if needed.

How to Make Chicken Breakfast Sausage
- In a large mixing bowl, mix all the ingredients together.
- Using your hands or a large cookie scoop, divide mixture into 8 even sized balls. Shape each into a patty, about 1/2 inch thick.
- Add oil in a skillet over medium heat (to medium-high heat). When the oil is heated, add the chicken patties and cook for 4 minutes. Turn and cook for another 3-4 minutes, or until fully cooked.
Depending on the size of your pan, you might need to cook in batches.
