Perhaps Spring fever has officially set in, but I’ve been doing a TON of baking! The weather has been warmer, the windows have been open, and it certainly feels like I can come out from under my blanket which was so comfortable all winter.
Easter is coming up soon and I’m using that as an excuse to channel my heightened creativity in the kitchen.
I baked 4 new Easter treats one morning over the weekend, and 3 of them got the passing grade from my tiny kid-testers.
The first is Chocolate Chip Cookie Dough Easter Eggs which was really fun to make. Also – FINALLY we’re encouraged to eat the cookie dough!
Chocolate Chip Cookie Dough Easter Eggs is a no-bake easy recipe that would be great for seasonal parties or as a ‘just because’ treat.
The hardest part in making this recipe would probably be the decorating, that is, if you are a bit of a culinary perfectionist like I tend to be. I wholeheartedly had such grand hopes for these to be so gorgeous they could grace the cover of a magazine.
Alas {dose of reality right across the face}, I had many little hands wanting to help decorate. So while they aren’t as polished as I had imagined them to be, the kids and I had a great time decorating them together.
In the end, that’s what absolutely counts. No, wait – they are super delicious and that counts for a lot too!

Chocolate Chip Cookie Dough Easter Eggs
Chocolate Chip Cookie Dough Easter Eggs is a fun recipe to make, and a very simple and easy no-bake recipe. FINALLY we're encouraged to eat the cookie dough!
Ingredients
- ½ cup soft butter
- ¾ cup brown sugar
- 3 teaspoons vanilla
- ¾ cups flour
- 2 teaspoons milk
- ½ cup icing sugar
- ½ cup chocolate chips
- 1 pkg White Chocolate {bar or round chips}
- Decorations of choosing
Instructions
- In large bowl cream together butter and brown sugar.
- Add vanilla, flour, milk and icing sugar.
- Mix until well combined, then add chocolate chips and stir gently until combined.
- Scoop dough into 1 inch balls, flatten and shape dough into an egg shape on a parchment paper lined pan. Lightly dust finger tips with flour if dough is too sticky
- Freeze for at least 2 hours to overnight.
- After freezing, melt the white chocolate in small increments to avoid burning.
- Dip each frozen egg into the chocolate, shake off extra and place on parchment paper, let dry.
- Decorate as desired and allow to harden.
- Enjoy!
