This time of year I rely heavily on my slow cooker and casserole recipes, due to ease and how well they fit into a busy schedule.
Chicken and Spinach Pasta Casserole is very easy to put together and can be refrigerated until you bake.

The chicken, pasta and spinach combine nicely with the cheese to make one great tasty dinner.
It’s up there with all the ‘comfort food’ greats.

Another wonderful thing about this recipe is that it’s versatile, so add more or less cheese if you’d like {or a non-fat variety}.

You can also use other noodles of choice.
My kids gobble this casserole up, and my oldest asked for this one to replace other casseroles I make. It’s always a win when everyone in the family enjoys a meal!
Chicken and Spinach Pasta Casserole


Chicken and Spinach Pasta Casserole
Ingredients
- 8 oz Cooked Pasta (I use Rotini)
- 1/2 Cup Onion (chopped)
- 1/2 8 oz pkg Frozen Spinach (Thawed)
- 3 Boneless Skinless Chicken Breasts (cooked, Cubed)
- 1 large can Italian-style Diced Tomatoes
- 1 8 oz pkg Philadelphia Chive & Onion Cream Cheese
- 2 Cups Shredded Mozzarella Cheese
- 1/2 tsp Salt
- 1 tsp Pepper
Instructions
- Cooked Pasta a cording to directions on the package
- Cube chicken breasts and cook in a frying pan, adding chopped onion to the Chicken when almost done. Set aside when cooked.
- Drain the water out of the Spinach as best you can, using paper towels.
- In a large bowl, combine pasta, spinach and chicken/onion. Add tomatoes, cream cheese and mozza and stir until combined.
- Spoon mixture into a slightly greased casserole dish. If yo have leftover mozza, sprinkle some on top if you desire.
- Bake covered at 375 for 45 minutes, uncover and bake for an additional 15-20 minutes until top browns to liking.
- Enjoy!

Don’t care much for the taste of spinach but this totally makes it look delicious!
I made this last night and it’s absolutely delicious! So very easy to put together too, which was good because I didn’t really feel like cooking but needed to get something on the table.
I didn’t have flavored cream cheese, only plain. I used mini farfalle pasta since that was all I had in the cabinets. Also I used the Italian blend shredded cheese, with a little extra on top. It fit nicely into a 2qt casserole dish.
