Black Bean & Rice Open-Faced Tacos
Through the help of Ben’s Beginners and kid-friendly recipes with cooking lessons and tutorials, my kids have been even more busy in the kitchen than usual. They’ve always had interest, yet this motivating tool makes it so much fun and easier for them, because even they get the ‘stand in the kitchen clueless on what to make’ blahs.
The latest easy meal my kids made is Black Bean & Rice Open-Faced Tacos, which is a quick and easy recipe that uses pantry staples. This is a meatless dish, though you could add shredded chicken or beef if you so wish.
I loved the taco cups made from tortilla shells baked using the underside of muffin tins, and the kids were really impressed that they made edible bowls!
Following the cooking lessons for this recipe, the kids had no issues making Black Bean & Rice Open-Faced Tacos from start to finish, though they did ban together to nix the corn and olives.
That’s ok though, this is why cooking is such a great life lesson for kids, they are more apt to eat what they themselves choose and make. Plus it’s skills learned and such a confidence booster!
After completing the cooking lessons for this recipe, my kids earned the ‘Taco Tamer badge’, clever! There was also the reminder to enter to win the contest for a job well done!

My kids would like to make Chicken Broccoli & Rice Casserole.
I think my grandchildren would enjoy making and eating Cheesy Rainbow Rice with Ground Beef.
My 12yr loves baking/cooking and likes trying out new recipes!! Taco Night is a family favorite and everyone probably will like trying Taco Bowls!!
