An easy lemon dessert that is easy to prepare and great for outdoor entertaining or just a nice dessert for the family.

Ingredients

Graham Squares

Margarine or Butter

pkg Light Cream Creese

packed Brown Sugar

grated Lemon Peel

Fresh Lemon Juice {squeezed from the lemons you just grated}

Baking Powder

Icing Sugar
Instructions
Preheat oven to 350°F.
Line 8" square pan with foil, allowing foil to extend beyond rim {just easier to remove that way}
Combine crumbs, 1/2 cup flour and brown sugar in a bpwl
Cut in margarine or butter with two knives until it resembles crumbs
Press mixture firmly into the bottom of the pan, and bake for 15 minutes {do not burn!}
Beat cream cheese and sugar on medium speed
Add eggs and 2 tbsp flour and mix well
Blend in the lemon peel, lemon juice and baking powder.
Pour mixture over the crust
Bake 25 minutes
Let cool completely then put into the fridge for at least 2 hours or even overnight.
To serve, cut into squares and sprinkle with icing sugar or some more lemon peel for garnish
