To make these Pecan Cookies, just drop spoonfuls onto a sheet of wax or parchment paper and let it sit for at least an hour or longer.
Once it’s completely hardened, you can move them safely.
It’s a wonderful easy no-bake holiday treat.

Pecan Haystacks is a recipe that you can start and finish in very little time.
In fact, it uses only 4 simple ingredients: milk chocolate chips, butterscotch chips, pecan and chow mein noodles!
How do you make pecan haystacks?
Stirring often to avoid burning you simply melt the chocolate chips and butterscotch chips in a medium sized saucepan on the stovetop {until completely melted}.
This takes maybe 5 minutes. Not long at all!
Next, stir in the pecan halves and the chow mein noodles until they are completely covered by the chocolate mixture.
That’s pretty simple!

Pecan Haystacks make a nice snack or you can package them up and gift.
In the past when I’ve given these to friends and family, the response has been so positive.
If you do want to give to others, you better make another batch though, you’ll want some of these for yourself!
The whole family will devour these simple treats! I’m mad about pecans, it’s my all-time favourite nut.

Pecan Haystacks
Ingredients
- 1 cup milk chocolate chips
- 1 cup butterscotch chips
- 1 cup pecan halves
- 2 cups chow mein noodles
Instructions
- Melt the chocolate chips and butterscotch chips in a medium sized saucepan on the stovetop over low heat. Stir often. As soon as the chips are melted, remove from heat.
- Stir in pecan halves and chow mein noodles until they are completely covered by the chocolate mixture.
- Drop spoonfuls onto a sheet of wax paper {parchment paper works too}.
- Let the haystacks set for at least an hour. Once the chocolate has hardened, enjoy!
Are these the dried chow mein noodles you buy in pack, and you break them in bits?

Can you use pretzel sticks instead of how mein noodles for the haystacks?
It would be a crunchier taste for sure, but I wouldn’t see the harm in giving it a try. Let me know how it goes!
I use toffee crunch chips ( in place of butterscotch) with macadenia nuts. or sometimes I use dried cranberries. they turn out soooooo good.
I love no bake recipes because they are so easy. I have made these before with peanuts, but i will have to try pecans next time!
