One of the best things about summer is grilling all the foods. While it can be done all year long, there’s just something about BBQing on a summer day.

Typically we are a burger, hot dogs, and chicken grilling people, but kabobs are delicious and should be put on the rotation just as much. Spicy beef, a load of fresh vegetable and seasonings to perfect make this Spicy Beef Skewers recipe fantastic!

This recipe is so very versatile, you could easily add in extra vegetables of your choosing, focus more on the meat – or add in other veggies that you prefer more. For those that aren’t masters of the grill quite yet {both my hands are raised}, this is an easy grilling recipe that is good for beginners as well.

I focus a lot on a low-carb eating lifestyle, and these fit right in there so well. I get a colourful mix of vegetables and so much protein – for a punch. So good!

Best of all, if you have leftovers {doesn’t happen often but you could double the recipe so you do}, simply remove the wooden skewers and add the medley to freshly made rice to make an awesome stir-fry!

Ingredients 

  • 1 lb Beef (cubed)
  • ½ tsp Garlic powder
  • 2 tbsp Soy sauce
  • ½ tsp Ginger powder
  • 1 tbsp Honey
  • ¼ cup Olive Oil
  • ½ tsp Chilies (crushed)
  • Dash Lime juice
  • Dash Pepper
  • 5 {or more} Cherry Tomatoes
  • 1 Zucchini (med, cut in 1” pieces)
  • Mushrooms (as desired)
  • ½ Onion (large, cut in chunks)

Instructions

  • Place beef in a bowl and season with seasoned salt.
  • In a bowl, combine garlic, soy sauce, ginger, honey, olive oil, and chilies. Mix well.
  • Place beef into a plastic freezer bag and pour the marinade over the beef. Leave to marinate for at least 1 hour to overnight.
  • Soak wooden skewers in water so they don’t burn on the grill
  • Begin assembling the skewers in any arrangement you prefer. Allow for 3-4 pieces of beef per skewer.
  • Heat bbq to 350
  • Salt the vegetables before they’re placed on the grill
  • Place the skewers on the grill and leave in place to cook for approximately 5 – 6 minutes per side, or until you see the development of nice grill marks and the vegetables are cooking through.
  • Remove from grill when the skewers are cooked through.
  • Serve and enjoy!
