Roasted Garlic Chili

Truth: I have been making my Classic Chili Con Carne recipe for 20 years {found in my slow cooker collection of recipes here on the blog}. Over time, I’ve mastered the ingredient list to perfection, and now I can make it without even looking at the worn-out recipe card.

Yet, it’s one meal that does take a lot of ingredients; lots of spices and usually I have to do a shopping trip to purchase everything required, including many canned goods and fresh veggies. Yet, it’s been a favourite in our house for a very long time.

When I first held the new Club House Chili with Roasted Garlic Skillet Sauce in my hands, I immediately thought ‘this looks so simple, yet in no way will it be as good as my own perfect recipe‘ – Of course, said with all the confidence and egotism I could muster.

Reading the instructions on the packet, it only called for a few ingredients – the skillet sauce, ground beef, kidney beans and tomato sauce. Seriously, that’s it?

I set to work making the chili, yet also incorporated fresh onion, red peppers and a can of whole mushrooms. Even though the skillet sauce has veggies in it, more is merrier, right?

From start to finish, this Easy Skillet Chili with Roasted Garlic only took 30 minutes, at most. So, I was faced with two easy methods to make chili for myself and my family: slow cooker version which required about 30 minutes of prep and an all-day slow cook, and this Club House Skillet Sauce which took 30 minutes start to finish. Hmmm.

When the chili was done, I tasted it and was pretty much blown away. So good!

It’s the perfect texture with the ideal blend of spices and herbs. I stood over the skillet and tasted the chili a couple of times, savouring each spoonful and trying to recall my own chili …. Indeed, I think my own chili was missing one key spice all along … Not ‘tomatoey’ enough? Not spicy enough? Too much of something?

After 20 years, I couldn’t put my finger on what this chili had, that mine had always lacked.

I set the bowlfuls of chili in front of the girls and they immediately dug in.

I turned to Isabelle {my oldest and a huge fan of her Mom’s classic chili}, “So .. this ones different than my usual, can you tell?” I asked her. “Oh yeah” said Isabelle with a mouthful of chili, “So much better than before, Mom! Make it this way from now on!”

Defeat.

So, Club House – I’m shaking my fist at you. But, I love you at the same time since you made it so easy to make such a flavourful chili. You totally win.

Would it be so bad if from now on I hid a bunch of Club House Chili with Roasted Garlic Skillet Sauces in the pantry – and quickly destroyed the package after use. You know, just to keep my title as having ‘the best chili ever’, as my family has said?

Let’s keep this one our little secret, ok friends?!
