What is Marry Me Chicken?

With its non-descriptive ‘Marry Me Chicken’ name, an explanation is necessary. It’s said that this chicken dinner is so amazing, it’ll make your partner fall in love and propose.

Who said? Well, I’m not entirely sure … but if the key to the heart is indeed through the stomach, it’s pretty accurate. If everyone loves a meal I make, kids included, that’s something to swoon over.

Plus, I love the taste of this chicken recipe so much I’d marry it. Just ‘saying.

Why You’ll Love Marry Me Chicken

  • TASTY – From the tender chicken breasts, fresh herbs, and the creamy garlic parmesan sauce, you’ll love every aspect of this recipe.
  • EASY RECIPE – This chicken dish takes just 30 minutes to make and uses one skillet.
  • VERSATILE – A delicious chicken recipe for a family dinner, special occasions, or just for busy weeknights.
  • Total Time: 30 Minutes
  • Serves: 4

Ingredients and Notes

Here are the simple ingredients you’ll need to make Marry Me Chicken. As always, the full recipe is on the printable recipe card at the end of the post.

  • Chicken Breasts – I prefer using boneless and skinless chicken breasts for this recipe as they cook quickly and evenly. Slicing them lengthwise ensures they cook faster and more uniformly.
  • Seasoning – This recipe calls for simple spices: salt, ground black pepper, and dried oregano.
  • Olive Oil – used to brown the chicken and saute the garlic. You can use butter if you’d like.
  • Garlic – for that wonderful garlic taste
  • Chicken Stock – thins the sauce a bit so you don’t have an entirely cream sauce. Makes this recipe a little lighter on the calories. You can use vegetable broth if necessary.
  • Heavy Cream – Key ingredient for the creamy sauce! You can substitute half-and-half for lighter sauce, yet the trade will result in a less than rich sauce.
  • Parmesan Cheese – Freshly grated parmesan cheese adds a rich and nutty flavor to the sauce. I highly recommend using freshly grated parmesan for the best results. Store-bought parmesan cheese doesn’t dissolve as well in sauces.
  • Sun-Dried Tomatoes – Sun-dried tomatoes add a burst of sweet and tangy flavor to the dish. You can use either oil-packed or dry sun-dried tomatoes, depending on your preference.
  • Fresh Basil – Fresh basil adds a wonderful aroma and freshness to the dish. If you don’t have fresh basil, you can substitute it with dried basil, but fresh is always best if you can get it!

Tips for Success

  • To ensure the chicken cooks evenly, I like to pound it to an even thickness before cooking. This also tenderizes the chicken, making it more flavorful.
  • Be careful not to let the garlic burn when sautéing it in the olive oil. Burnt garlic can taste bitter and ruin the flavor of the dish.
  • If you prefer a thicker sauce, you can simmer it for a few minutes longer to reduce and thicken it. Conversely, if you prefer a thinner creamy sun-dried tomato sauce, you can add a little more chicken stock or cream.

How to Make Marry Me Chicken

  1. Start by seasoning the chicken breasts with salt and pepper on both sides.

  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

  3. Once the oil is hot, add the chicken breasts to the skillet. Cook for 2-3 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add the remaining tablespoon of olive oil.

  5. Add the minced garlic to the skillet and sauté for 1-2 minutes, or until fragrant. Use a wooden spoon and continually stir.

  6. Pour in the chicken stock (chicken broth) and scrape up any browned bits from the bottom of the pan.

  7. Reduce the heat to medium-low and stir in the heavy cream, grated parmesan cheese, dried oregano, and chopped sundried tomatoes.

  8. Let the sauce simmer for 2-3 minutes, or until it starts to thicken slightly.

  9. Return the cooked chicken breasts to the skillet, turning to coat them in the sauce.

  10. Continue to cook for an additional 5-8 minutes, or until the chicken is completely cooked and the sauce has thickened to your desired consistency.

  11. Remove the skillet from the heat and garnish the dish with fresh basil leaves.

  12. Serve the Marry Me Chicken hot, spooning extra sauce over the top.

Recipe Variations

  • You can use skinless chicken thighs instead of chicken breasts.
  • You can customize the flavor of the dish by using different herbs. Fresh thyme, rosemary, or parsley would all work well in place of the oregano and basil.
  • If you like a bit of heat, you can add some crushed red pepper flakes to the sauce.
  • Sometimes I like to add a bit of fresh spinach near the end of the cooking time. It adds more vegetables and tastes great in this dish.

What to Serve with Marry Me Chicken

Marry Me Chicken is delicious served over cooked pasta such as angel hair pasta, or rice. I like to serve it with a simple side salad and some crusty bread or garlic bread to soak up the extra sauce.
