Fall in love with this Marry Me Chicken recipe, a 30 minute meal for busy weeknights to romantic date nights. Tender chicken breasts in a creamy sauce that is loaded with garlic, parmesan, sun-dried tomatoes, and herbs.

3tablespoonsolive oil

½cupchicken stock
1cupheavy cream
¾cupparmesan cheesegrated
1teaspoondried oregano
½cupsun-dried tomatoeschopped
1tablespoonfresh basil leaves
Instructions
Start by seasoning the chicken breasts with salt and pepper on both sides.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the chicken breasts to the skillet. Cook for 2-3 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil.
Add the minced garlic to the skillet and sauté for 1-2 minutes, or until fragrant.
Pour in the chicken stock and scrape up any browned bits from the bottom of the skillet.
Reduce the heat to medium-low and stir in the heavy cream, grated parmesan cheese, dried oregano, and chopped sun-dried tomatoes.
Let the sauce simmer for 2-3 minutes, or until it starts to thicken slightly.
Return the cooked chicken breasts to the skillet, turning to coat them in the sauce.
Continue to cook for an additional 5-8 minutes, or until the chicken is completely cooked and the sauce has thickened to your desired consistency.
Remove the skillet from the heat and garnish the dish with fresh basil leaves.
Serve the Marry Me Chicken hot, spooning extra sauce over the top.
Notes
Best enjoyed fresh, but you can store any leftovers in an airtight container in the refrigerator for up to 3 days.
To reheat, simply warm it gently in a skillet over low heat, adding a splash of chicken stock or cream to help revive the sauce.
Unfortunately, this dish doesn’t freeze well due to the creamy sauce. The texture tends to change upon thawing, and the sauce may separate.
