Vanilla has always been one of my favourite scents and tastes, ever. I could seriously vanilla all the things. Which is why I adore this Vanilla Cupcake with Vanilla Frosting.

While there are so many fantastic cupcake flavours out there, this takes it back to the roots of why I love this dessert – it’s classic.

This cupcake has no frills, no fanciness – simply a taste that cannot be beat. Sure, sometimes I opt for frosting that is a different flavour than the cake, yet sometimes you just crave simplicity. Pure goodness.
This recipe calls for vanilla bean, and it does taste remarkably well with the real deal. Yet, if you don’t have any on hand, it’s not a recipe breaker. Sometimes, out of pure laziness, I stick with just the extract, though mine is Mexican vanilla.
I purchased some on a trip about 10 years ago and I haven’t went back, each time we visit, I bring back enough to fill my stock until the next time.

This Classic Vanilla Cupcake with Vanilla Frosting recipe has an icing that is simple as well, and easy to make. More often than not I make Dream Whip Icing {not too sweet}, yet this frosting forms so well, it just makes such a pretty cupcake.


Classic Vanilla Cupcake with Vanilla Frosting
Ingredients
CUPCAKE
- 1 1/3 cup flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 cup sugar
- ½ cup unsalted butter (softened to room temperature)
- 1 egg white (room temp)
- 1 egg (room temp)
- ¼ cup Sour Cream
- 3/4 cup half and half cream
- 2 tsp vanilla extract
- seeds from a ½ vanilla bean (scraped)
FROSTING
- 1 cup unsalted butter room temp
- 4-5 cups powder sugar
- ¼ cup heavy cream whipping cream
- 2 tsp vanilla extract
Instructions
CUPCAKE DIRECTIONS
- Preheat oven to 350F
- Line muffin tin with 12 cupcake liners.
- Using a medium bowl – mix flour, baking powder, baking soda, and salt. Set aside
- Using a whisk, mix together butter and sugar – mixture will be grainy.
- Add the egg, egg whites, sour cream, half and half, and the vanilla extract until well combined {into the butter and sugar mixture}
- Using 1 vanilla bean split it down the middle lengthwise, scraping the seeds from half of the vanilla bean into batter.
- Mix the the dry ingredients into the wet ingredients. Make sure it is well mixed there should not be any lumps.
- Bake for 18-20 minutes or until a toothpick inserted into the center, comes out clean.
- Let cupcakes cool for 20 minutes before frosting
FROSTING DIRECTIONS
- Mix the softened butter with a mixer or medium sized bowl with a hand mixer on medium speed.
- Beat for about 3 minutes it will become creamy and will begin form peaks.
- Add a little at a time: powder sugar, whipping cream, vanilla extract.
- Continue to mix for 3-4 minutes.
- Add more powdered sugar if frosting is too thin.

Dream Whip makes the best icing for the summer. I love how light and fluffy it is. Like you, I use Mexican vanilla. It has such a rich flavor.
I’m normally a box mix cake maker but this recipe looks so good and my daughter wants cupcakes for her birthday party in a few weeks. Maybe I’ll make a practice batch this week and see if I can handle making enough for her party!
