While the calendar says otherwise, I’ve decided that it’s officially summer! We’ve had amazing 30 degree weather.
At any given point I am surrounded by the sounds of birds, sprinklers or lawnmowers. Possibly a combination of all. Then there’s the fact that the bulk of our days are now spent outdoors.
Yes, summer is indeed here! Let’s all celebrate with a BBQ!

Yet busy chaotic days and increased temperatures {not complaining about either, it’s just a life fact}, means that I get the cooking blahs quite often.
I don’t want to further heat up the house, so the change in season forces me to cook our favourites in different ways.
In other words, your BBQ is perfect for more than just burgers and steaks!
This BBQ Breakfast Scrambler recipe is one such meal that I’d normally cook in the oven. It’s a favourite dish for us and I didn’t want to not make it despite not wanting to use the oven.
Another beauty of this BBQ Breakfast Scrambler recipe is that you can make it at home on the barbecue, or on the campfire out camping!
We tend to make a lot of brunches when out camping and this recipe hits all food groups and is a one-dish meal. This means less cleanup.
In fact, all the ingredients fit right inside the Foil Pan so it can go wherever your outdoor summer adventures take you.

More often than not I make this recipe with ham, yet you could use bacon or sausage – just swap out the ingredients.
For eggs I like to choose one of the many liquid egg varieties found at our grocer, easily spotted with it’s new and fancy packaging.

How to Make a BBQ Breakfast Scrambler
- Spray a foil BBQ-safe pan with cooking spray, add in the thawed hashbrowns and ham.
- Add eggs to a large bowl with milk and whisk until combined. Stir in the cheese, green onions and tomatoes and pour over the hashbrowns and ham.
- Add salt and pepper to taste.
- Cover with foil and cook on the BBQ {on indirect heat} at 375 degrees for 30 minutes.
- Uncover the pan and cook for an additional 15-35 minutes, until edges are crispy {when done you’ll notice that the hashbrowns are coated with scrambled eggs}. Enjoy!

Ingredients
- 6 cups hashbrowns (thawed)
- 2 cups ham (diced)
- 6 whole eggs
- 1/4 cup milk
- 2 cups cheddar cheese (shredded)
- 1 cup green onion (diced)
- salt & pepper (to taste)
- 1/2 cup tomato (diced)
Instructions

I really like quiches. I try to make the bite sized ones but tend to just eat those too fast, but I think my fav dish is quiche (and I love to eat deviled eggs, but only if someone else makes them) Sometimes I get craving for pickled eggs (And pickled Ukranian sausages lol)
