Biscuit Taco Cups

It’s no secret that tacos are a favourite in this house. Yet, with two toddlers, it isn’t the most ‘friendly’ of recipes when it comes to … total mess!

So, I thought I’d try Biscuit Taco Cups and see if they were more of a kid-friendly choice.

I usually make my own biscuits {simple to make and just a few ingredients}.

Yet, for added ease, you can also use Pillsbury Grand bisquits {though they are hard to find in stores near me}.

Delicious and just plain cute – Biscuit Taco Cups are a must-try. Though small, the addition of the Biscuits make them very filling, one could do most people. The kids made less mess and we all gobbled them up. And, the biscuits heat up nice the next day too, for leftovers!

Ingredients

  • 1 can Pillsbury Grand bisquits
  • 1 lb . Ground Beef (or chicken, or steak etc)
  • 1 Packets Taco Seasoning
  • Fresh Veggies: Lettuce (tomato, green pepper, jalapeno etc)
  • Sour cream

Instructions

  • Heat oven to 375°F. Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain.
  • Add taco seasoning mix and water; mix well. Reduce heat to medium; simmer 10 minutes or until ground beef mixture is slightly thickened, stirring occasionally.
  • Spray cupcake pan lightly with nonstick cooking spray.
  • Separate dough into 8 biscuits and press to into and as much up the side of cups as possible.
  • Bake at 375°F. for 14 to 16 minutes or until deep golden brown. Remove pan from oven. If cups are puffed, before they cool, try to gently pat them down to get that 'cup' form back.
  • Remove biscuit cups after about 10 minutes once they have cooled enough to keep shape.
  • Spoon beef mixture evenly into each cup.
  • Top with cheese, lettuce, tomato, sour cream and salsa.
