Place the carrots and the potatoes at the bottom of the slow cooker. Pour chicken broth on top.
In a small bowl mix olive oil, garlic powder, dried parsley, salt and pepper. Brush the olive oil mixture over the turkey breasts.
Place the turkey breasts on top of the veggies, cover and cook on low for 8 hours or on high for 4 hours.
Sprinkle with fresh parsley when ready to serve.

When you're ready to enjoy the frozen leftovers, transfer to the refrigerator and allow to thaw overnight.
