Zucchini Brownies
These Zucchini Brownies are a delicious dessert recipe to use up zucchini. It's a healthier version of a classic recipe, great for a bite-sized treat, potlucks and for all ages.

Ingredients

zucchini
shredded {approx 3 zucchini}

egg
1/2

honey
1
tsp
vanilla extract
1/2
cup
coconut oil
1/2
cup
cocoa powder

cup
flour

baking soda
Instructions
Shred zucchini and place in a colander set over a sink or towel to catch excess water.
Preheat an oven to 375F and grease a 8" x 8" casserole dish.
In a large bowl, combine egg, honey, vanilla extract and coconut oil. Beat in the cocoa powder and set aside.
In a small bowl, combine the flour and baking soda.
Add the flour mixture to the honey mixture, then fold in the zucchini.
Fold the mixture out into the greased casserole dish and then bake for 22-25 minutes, until an inserted toothpick comes out clean.
Allow to cool, and cut with a plastic knife to serve. Enjoy!
