Add all ingredients to a mixing bowl, and whisk to combine. The batter will be thick. yet you can add 1-2 tbsp of milk if you'd prefer it to be a thinner batter.
Heat a skillet over medium heat, and spray surface with cooking spray
Pour batter onto skillet in desired size. When bubbles start to appear on the top of the pancakes, flip and cook the other side.
Serve with syrup, and fruit if desired. I love this recipe with bananas on top, yet berries would be delicious too.
