In a large skillet over medium heat, add the 1 tbsp olive oil. Season pork medallions with salt and pepper generously on each side. Place into skillet, and cook over medium high heat for about 2-3 minutes on each side {pork should reach 145 degrees F}.
Remove from skillet and let rest on a large plate.
Place the skillet back on the burner, add ½ tbsp olive oil and heat over medium heat. Add garlic and saute for 1 minute. Add chicken broth and bring to a simmer. Simmer for 5 minutes, occasionally stirring. Remove from heat.
Add lemon zest and juice, and parsley; stir until combined.
Serve pork medallions and spoon sauce over the top.
