Ingredients
• 3 tbsp olive oil
• 1/2 yellow onion
diced
• 2 cloves garlic
minced
• 8 cups low sodium chicken broth or vegetable broth
• 1/2 tsp dried thyme
• 1 tsp kosher salt
• 1/2 tsp black pepper or to taste
• 1/2 head cabbage
chopped in about 1 1/2" chunks
• 4 medium carrots
peeled and chopped
• 2 stalks celery
thinly sliced
• 1 14.5 oz. can stewed tomatoes
Instructions
In a large pot add olive oil, onion and garlic. Cook until the onions are see through, about 3-5 minutes.
Add in the broth, thyme, salt, pepper, cabbage, carrots, celery, and tomatoes. Simmer on low for 30 minutes.
Serve warm and enjoy!

Add in less or more broth to control how thick or thin you want the soup to be
