Ingredients

can corn
1
large avocado - cut
peeled and cubed
¼
red onion
diced
½
sweet pepper
green, red, orange - whatever your preference

tbsp
olive oil

tbsp
white wine vinegar

tsp
sugar
salt and pepper to taste
Instructions
In a large bowl combine the corn, avocado, onion and sweet pepper.
In a second bowl, combine the olive oil, white wine, sugar, salt and pepper. Mix well.
Pour the dressing over the corn mixture and combine.
Refrigerate for 1 hour before serving.
