Ingredients

extra virgin olive oil

small yellow onion

fresh ginger
grated

can Fire Roasted Diced Tomatoes with No Salt
drained

low-sodium chicken broth

cooked chicken

For Serving:
plain greek yogurt
fresh parsley or fresh cilantro

Instructions
Heat olive oil in a large skillet over medium heat.
Add onion and sauté for 5 minutes, until softened. Add in the garlic and ginger and sauté for 1 minute.
Stir in curry powder and black pepper, and sauté for 1 minute. Add in diced tomatoes, and the chicken broth.
Bring to a simmer and cook for 4-5 minutes, until slightly thickened.
Stir in cooked chicken, peas and coconut milk, and simmer for another 4 minutes.
Turn off the heat and stir in yogurt, or serve and dollop with yogurt.
Serve with chopped fresh parley or cilantro, basmati rice and naan bread.
Notes
Serve with basmati rice and naan flatbread as a side dish.
