If you love Chinese fried rice, but don't enjoy the carb count that comes with it, you'll love this easy Cauliflower Fried Rice recipe. It takes few ingredients, can be ready in 15-20 minutes and is loaded with vegetables.
Add olive oil to a pan and add in the cauliflower rice and garlic powder. Cover the pan and let steam for 2-3 minutes.
Add the mixed vegetables and pepper - and cover again, stirring to combine every now and then until all the vegetables are cooked to desired consistency.
Once vegetables are cooked, add in desired soy sauce, combine well and once heated again - serve immediately and enjoy!
