Boozy Peaches and Cream Parfait is the ideal indulgence after a meal, and with that kick of bourbon or whiskey - this is a great alcoholic dessert for adults.
2ripe peachespitted and sliced into about 8 pieces
1tbspbrown sugar
1tspvanilla extract
1cupheavy cream
4tspsugar
5tspbourbon or whiskey
1cupgranola
Instructions
In a shallow dish, add peaches and sprinkle with brown sugar and vanilla*; place in fridge and let sit for 15 minutes.
Using a stand mixer or electric mixer, add heavy cream, 4 tsp sugar, and bourbon/whiskey to the bowl; whip/beat on high speed. After a few minutes the cream should thicken up and form peaks; set aside
Using your serving bowls or glasses, add a bit of granola to the bottom of each one, then top with about ¼ cup whipped cream, sprinkle more granola, then arrange 4 peaches on the side of each bowl/glass. Top with additional granola and a dot of whipped cream. Serve immediately.
Notes
Each parfait will use about ¼ cup of granola. For a more boozy recipe, add 1 tsp of bourbon to the brown sugar and vanilla when you soak your peaches.
