hard boiled eggs
1
small avocado - pitted
peeled and mashed
3
tbsp
plain Greek yogurt
2
tbsp
mayonaise
4
tbsp
green onion
chopped
4
tbsp
celery
1/4
tsp
dijon mustard
salt and fresh ground pepper
to taste
Slices
of bread for the sandwich
Instructions
Place hard boiled eggs in a medium bowl and mash with a fork until you have medium chunks of egg.
Add mashed avocado, yogurt, mayo, mustard, green onion, celery, salt and pepper - and mix until combined.
Spread between two slices of toast.
Enjoy!
Notes
you could also eat with crackers or in a wrap!
