With the holiday season coming up, so is the need for delicious sides. While I have my favorite vegetable side dishes like green bean casserole and glazed carrots, I’m always on the hunt for a new great recipe.

Brussels sprouts are one of those ‘love it or hate it’ vegetables. I was on the ‘no way’ side for many years, until I discovered that when cooked right, they are amazing.

When paired with the right flavourings and roasted until golden brown and crispy, brussel sprouts are so tasty. They really don’t deserve the bad rap they oftentimes get.

Ingredients Required

  • Brussels sprouts – You’ll definitely want fresh brussels sprouts.
  • Almonds – Use plain raw for best results.
  • Feta cheese – A brick or crumbles will both do for this recipe.
  • Olive oil – for roasting, and any type is fine.
  • Garlic powder – Adds extra flavour to the dish.
  • Balsamic vinegar – Caramelizes for a great flavour and the best texture
  • Salt – Adds flavour and counters the bitterness of brussels sprouts.

How to Make Roasted Brussels Sprouts

Here is the easy recipe to make roasted brussel sprouts using basic ingredients. As always the printable recipe card is below.

  1. Preheat oven to 375F.

  2. Take clean raw brussels sprouts and remove stalks and cut them in half with a sharp knife.

    Pro Tip: If you have rather large brussels sprouts, chop them in quarters so they cook evenly. Place pieces on a baking sheet, in a single layer with cut sides down.

  3. Combine vinegar, olive oil, garlic powder, and salt into a small bowl. Brush the brussels sprouts with the mixture. Then bake in the preheated oven for 15 minutes or until fork-tender.



  4. In another baking dish, place the almonds with a drizzle of olive oil. Toast almonds for a cook time of about 10-12 minutes, or until they are just lightly roasted.

    Pro Tip: Get both pans ready together and you can bake them together so all is done at the same time!

  5. Add roasted almonds to the brussels sprouts, add crumbled feta cheese and stir to combine.

  6. Serve warm.

Recipe Tips

If you haven’t roasted brussels sprouts before, here are some tips for success.

  • Make sure brussels sprouts are equal sizes to make sure each one is cooked evenly. Larger brussel sprouts may need to be cut more than just in half.
  • For crispy brussels sprouts make sure they are placed in a pan in a single layer. If you are doubling the recipe, use a larger pan to get an even layer.
  • Cook cut side down to get a nice crispy outside

Storage and Reheating

  • Storage. Place leftover roasted brussel sprouts in the fridge in an airtight container. They will last for up to 5 days.

  • Reheating. To reheat brussel sprouts, you can use the microwave for fast results. To keep that crispy outside: use an air fryer, the oven, or the stovetop to reheat. Make sure they are in a single layer, and they should only take about 5 minutes to reheat through.

Note: I wouldn’t recommend freezing cooked brussels sprouts, as they tend to get soggy and mushy when defrosted.

Leftovers can be enjoyed the next day as a side dish. You can also use leftovers into easy salads or make a brussels sprouts salad.

Roasted Brussels Sprouts Variations

Our almond and feta addition to roasted brussels sprouts is perfection. Yet there are different ways to customize this recipe for great results.

  • Spices: we like salt and garlic powder, yet you can always use plain salt and black pepper or use fresh garlic to the sheet pan for baking.
  • Cheese: If you don’t like feta cheese, you can replace it with Parmesan Cheese, goat cheese or blue cheese.
  • Add Bacon: Crispy bacon pairs with this vegetable very well. Add chopped bacon and bake with the sprouts and they will cook together and be done at the same time.
  • More Sweetness: Maple syrup is a great choice to add more sweetness to brussels sprouts.
  • Add Citrus: Squeeze some lemon juice into the mix for a citrus taste
  • Swap Nuts: Instead of roasted almonds, you can use pine nuts or toasted walnuts instead.

  • 1 lb brussels sprouts
  • ¾ cup raw almonds
  • 8 oz feta cheese
  • 3 tbsp olive oil
  • ½ tsp garlic powder
  • 2 tbsp balsamic vinegar
  • ½ tsp salt

Instructions

  1. Preheat oven to 375F.
  2. Split brussels sprouts and remove stalks. In the case of large brussels sprouts chop them in quarters for them to cook evenly. Place them in a baking dish.
  3. Mix olive oil with balsamic vinegar, garlic powder, and salt into a small bowl. Brush the brussels sprouts with the mixture. Bake them in the preheated oven for 15 minutes or until fork-tender.
  4. In another baking dish, place the almonds with a drizzle of olive oil and bake them for 10-12 minutes or until lightly roasted.
  5. Add roasted almonds to the brussels sprouts, add crumbled feta cheese and stir to combine.
  6. Serve warm.

    Notes

    • Replace feta with parmessan cheese if desire
