My top suggestions for a delicious Mother’s Day Brunch?
Always popular with myself and the family is Glazed Ham and Hashbrown Casserole. Best of all, this recipe can be prepared the night before, taking it one step farther in the ‘easy’ direction. It also makes for great leftovers, cause you really don’t want to cook the next day either right? Who says Mother’s Day has to be just one day?! Ha!
For a new recipe to try, I was immediately drawn to the Scrambled Egg & Bacon Burritos Recipe found on the site. I just got back from a Mexican vacation this week – and I’m all about the salsa and spanish recipes right now. If you love taco nights at your house, I think you’ll like trying this one.

Those burritos look delicious! Personally, I’d like peanut butter banana stuffed french toast with a side of fresh fruit. Getting hungry just thinking of it! 🙂

That looks so delicious! I think anything the kids make would by default qualify as the best brunch, but I know my Mom would love it if we made her homemade tomato soup and mac & cheese – they’re her favourites and sooo easy to make. Life Made Delicious has some amazing recipes, too – the Greek Grilled Cheese Tacos Recipe, among others, looks so tasty. I’ll definitely be trying some of those recipes.
I’ve never tried homemade Tomato soup… I need to think outside the can, right?
Indeed! 🙂 I’m hopeless at remembering recipes, but hers involved blending together bread and skim milk powder in addition to the tomato bits. I remember thinking the ingredients were rather odd when I was old enough to comprehend, but then not giving it much more thought because it was so darn delicious.

Hmmmm… for mother’s day brunch either french toast or poached eggs! With a bowl of fruit on the side of course.
There’s this amazing place I went for brunch once where they had fried poached eggs on top of pulled pork and baked beans. Mmmmmm!!!

I’ve got a mexican brunch recipe for ya… huevos rancheros over corn tostada shell
topped with a roasted salsa and cabbage salad. It’s quick, easy and healthy. Yummm!

I usually always to work mother’s day. So it’s more so mother’s day supper for me. But if I wasn’t working then I would make pancakes from scratch, scrambled eggs, bacon, and sausage. Yummy!! Or help hubby make it since I shouldn’t have to make it all on Mother’s Day 😉
The burritos look delicious! A nice brunch side I like to do is pineapple and strawberries on skewers with a fruit dip.

My mother in law just made some really tasty gingerbread pancakes with a sweet lemon sauce. I’m not typically a gingerbread fan, but they were amazing!

overnight french toast with peaches. Easy and delicious.
I love Huevos Rancheros (and also anything with bacon).

I love these ideas. One thing I just don’t want to do on mothers’ day is cook, but restaurants are always so busy and not always that great for us health wise.
I like the make-the-night-before brunch casseroles. There are lots of recipes for them. One of my favorites is a french toast casserole with bread, milk, cream cheese and maple syrup…very sweet and yummy. It’s possible to make this lite with neufchatel cheese, skim milk, egg beaters, and lite syrup.
French Toast is always a winner along with sausage and variety of syrup. Luckily my in laws make there own syrup which is the best. Thanks for all the great recipes!
