This Healthy Vegetarian Cabbage Roll Soup is meatless and stocked with vegetables. It’s a hearty, healthy and delicious dinner that tastes just like cabbage rolls! This soup takes less than 1 hour to make.

On the heels of my much-loved Slow Cooker Cabbage Roll Soup recipe (an unstuffed cabbage roll soup based on traditional cabbage rolls) comes this healthier version. Packed with vegetables, and meatless – this recipe has fewer ingredients and is made on the stovetop in less than an hours time.

While I will always adore my slow cooker version that includes ground beef, this Healthy Vegetarian Cabbage Roll Soup recipe is more stock and vegetables based.

Made without the ground beef, this recipe takes less time to make. It’s good in a pinch when the craving hits, and NOW.

It wasn’t long ago that my daughter chose a Vegetarian lifestyle for almost a year. Dinner options were sometimes difficult, and this is how this recipe came to be. I wanted that taste, while also respecting her choices in going meatless.

The best part is, you can control how thick or thin this healthy soup is by adjusting the stock to your preference.

How To Make Vegetarian Cabbage Roll Soup

Making this soup recipe could not be easier, in fact there’s only two steps in the instructions and it’s made on the stove top!

You’ll need the following ingredients. The full recipe for this low carb healthy soup and detailed instructions are on the printable recipe card below.

  • olive oil
  • yellow onion
  • garlic
  • low sodium chicken broth or vegetable broth
  • dried thyme
  • kosher salt
  • black pepper 
  • head cabbage
  • carrots
  • celery stalks
  • can stewed tomatoes

Simply add the olive oil, onion and garlic into a large pot, and cook for 3-5 minutes over medium high heat.

Then, add in the broth, thyme, salt, pepper, cabbage, tomatoes, carrots, and celery. Simmer on low for 30 minutes and the soup with such a great flavor is ready to be enjoyed!

This is such an easy soup to make, and a great one-pot meal to have on a chilly day. It’s a hearty soup perfect for busy weeknights.

To Store: Place leftover soup in an airtight container and refrigerate for up to 5 days.

This delicious soup freezes well for later, and it’s great for making individual portions. After cooled to room temperature, place in freezer bags or small airtight containers and freeze up to 3 months. For this reason, I like to make a double batch of this soup.

This HEALTHY VEGETARIAN CABBAGE ROLL SOUP is meatless and stocked with vegetables. It's a hearty, healthy and delicious dinner that tastes just like cabbage rolls!

Ingredients

  • • 3 tbsp olive oil
  • • 1/2 yellow onion, diced
  • • 2 cloves garlic, minced
  • • 8 cups low sodium chicken broth or vegetable broth
  • • 1/2 tsp dried thyme
  • • 1 tsp kosher salt
  • • 1/2 tsp black pepper or to taste
  • • 1/2 head cabbage, chopped in about 1 1/2" chunks
  • • 4 medium carrots, peeled and chopped
  • • 2 stalks celery, thinly sliced
  • • 1 14.5 oz. can stewed tomatoes

Instructions

    In a large pot add olive oil, onion and garlic. Cook until the onions are see through, about 3-5 minutes. 

    Add in the broth, thyme, salt, pepper, cabbage, carrots, celery, and tomatoes. Simmer on low for 30 minutes. 

    Serve warm and enjoy!

  • Add in less or more broth to control how thick or thin you want the soup to be
