Bring on the Comfort Foods

Truth: I simply was not made for Winter.

This Canadian will never be used to our Alberta Winters, and will always long for the heat of the Summer sun. Despite hoping, praying and begging Mother Nature to be kind – I just have to tolerate when comes and lasts for the majority of the year. To do that, I surround myself in the comforts that warm like cozy sweaters, the heat from the fireplace, hot beverages and many hearty comforting foods.

This current season and comfort foods go and in hand, don’t they? Soups, stews, casseroles, meat & potatoes, soups and all the baked goods under the sun {or lack thereof}. So, it only goes without saying that since we got our fist snowfall {ok, it was a huge blizzard} week ago, I’ve been diving into my comfort foods recipes. It’s here to stay and so is my need to cook and bake up a storm {this time, the good kind}.

Using my new Frigidaire Freestanding Induction Range fits perfectly into my schedule and my needs for cooking and baking. Doing so takes less time thanks to the latest technology in this stove. I talked about it in detail, in my last post

From tried and true favourites found in my recipe box, plus the addition of new discoveries – I’ve been giving my stove a real workout. Cooking, baking, boiling, frying, broiling … I’ve done it all. Enjoyed it all.

  1. Mexican Fiesta Dip
  2. Bacon Wrapped Stuffed Chicken
  3. Chicken and Spinach Cannelloni Rolls
  4. Cookies & Cream Cupcakes

Yet, here’s a glimpse of the recent activity in my kitchen.

There’s also been new recipes, which I’m sure you’ll hear more of soon. yet for now, here’s one that was definitely added to my comfort foods list. Homemade Pizza!

I used a basic dough recipe {yet you could certainly buy the store bought kind, I won’t tell} and the girls added toppings of their choosing. In fact, they helped for the majority of the prep, which I think is a major factor in them eating the meal without the pickiness coming out.

The beauty of Homemade Pizza is that you can literally make up your own recipe. Add whatever you like form meats to veggies, cheeses and even fruit if you so dare. The house smelled divine, it was a great way to spend time together and it certainly made for a very cozy evening. Homemade pizza and a movie? Yep, ‘comfort’ down’t get any better than that!

I have a Recipe board on Pinterest specifically for those comfort foods I love, how often do you try recipes found on Pinterest?
