It’s also versatile, you can easily adjust the spice level or add more or different vegetables to suit preference.

Quick and Easy Chicken Curry

Here are the basic ingredients you’ll need to make this everyday chicken curry recipe. The full detailed instructions are below in the printable recipe card.

  • extra virgin olive oil
  • yellow onion
  • fresh ginger
  • clove garlic
  • yellow curry powder
  • black pepper
  • Fire Roasted Diced Tomatoes
  • low-sodium chicken broth
  • cooked chicken
  • frozen green peas
  • can of coconut milk

For Serving:

  • plain greek yogurt
  • fresh parsley or fresh cilantro, chopped

While you cook the quick and easy curry chicken, you can make the rice and get out the naan bread at the same time. Basmati rice and naan are my favourite sides to serve with chicken curry.

The best part is that you can make this coconut curry chicken recipe and the side dishes in under 30 minutes. I love such easy recipes!

It’s important to highlight the aromatic spice blend; onion, garlic, ginger and curry.

I also use broth, coconut milk and yogurt in this recipe, to make the most creamy sauce that thickens up nicely. The star of this recipe is definitely the flavorful sauce.

How to Make Easy Curry Chicken

  1. Heat olive oil in a large skillet over medium-high heat. Add onion and sauté for 5 minutes, until softened. Add in the garlic and ginger and sauté for 1 minute.
  2. Stir in curry powder and black pepper, and sauté for 1 minute. Add in diced tomatoes, and the chicken stock. Bring to a simmer and cook for 4-5 minutes, until slightly thickened.
  3. Stir in cooked chicken pieces, peas and coconut milk, and simmer for another 4 minutes. In all this coconut chicken curry recipe has a cooking time of less than 30 minutes if you already have pre-cooked chicken.

What to Serve with Chicken Curry

Either stir in the greek yogurt right before serving when heat has been turned off, or dollop as a topping after plated.

Alternatively, you could go with a full-fat sour cream as well. I love to serve this quick and easy chicken curry recipe with basmati rice and naan flatbread.

Of course you can also pair this traditional chicken curry recipe with white rice or brown rice. You can also try serving it with samosa and/or salads.

Variations on Creamy Curry Chicken

This easy chicken curry recipe with coconut milk has room to make it your own.

  • Make it Spicy: This is a moderately spiced good chicken curry recipe, which I feel suits most (especially those picky eaters). If you or your guests love spicy food and want to add heat, bump up the amount of curry powder by a half tablespoon, or add some cayenne pepper. To make the flavour more robust, add some garam masala as I did the first time I made this.
  • Make it Thicker: If you forget to drain the tomatoes or are using light coconut milk – the sauce might not be as thick as you’d like. To fix, make a cornstarch slurry using water and add into the sauce (before adding chicken) and it’ll thicken up in no time.
  • Make it Greener: Add more or less peas if you’d like, or add other vegetables too.

Is Chicken Curry Freezer Friendly?

Yes, place cooked curry chicken in a freezer bag or an airtight container and freeze for up to 3 months. Allow to thaw in the fridge overnight before warming through.

As well, leftover curry chicken can be stored for up to 4 days int he fridge, well covered with plastic wrap or in a storage container. Store rice separately if you’d like, but not necessary.

Ingredients

  • 3 teaspoons extra virgin olive oil
  • 1 small yellow onion, chopped
  • 2 teaspoons fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 1/2 Tablespoons curry powder
  • 1/4 teaspoon black pepper
  • 1 540ml can Fire Roasted Diced Tomatoes with No Salt, drained
  • 1/2 cup low-sodium chicken broth
  • 2 cups cooked chicken, chopped
  • 3/4 cup frozen peas
  • 1 400ml can coconut milk

For Serving:

  • plain greek yogurt
  • fresh parsley or fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and sauté for 5 minutes, until softened. Add in the garlic and ginger and sauté for 1 minute.
  3. Stir in curry powder and black pepper, and sauté for 1 minute. Add in diced tomatoes, and the chicken broth.
