While this summer lover has mixed feelings about the transition from summer to fall, I admit pumpkin desserts are a nice perk.

My favourite is my Pumpkin Spice Poke Cake, though I fully admit to kick starting my day with Pumpkin Spice Coffee Creamer.

Yet my favourite fall dessert has to be regular pumpkin pie. These Individual Pumpkin Pies are perfect for potlucks, or making when you know a whole pie might not be devoured immediately.

I love popping them out of the freezer and enjoying when the craving strikes for a traditional pumpkin pie.

Yet I love a good spin on the classic, which is why I adore this Maple Pumpkin Pie recipe. Tasty indeed, yet also so Canadian. I love pumpkin recipes.

This particular no bake version pumpkin pie recipe is another spin on the traditional, not only in convenience but with the creamy addition of marshmallow. YUM!

With just 7 ingredients, you’ll fall in love with this no bake pumpkin dessert. Even better, you don’t even need a large bowl to make it. Less cleanup is always nice during the holiday season, right?

One super nice thing out this marshmallow pie recipe is that it’s a ‘no bake dessert’. So, the texture will be a bit different, yet still as delicious.

The marshmallow in this recipe adds to the creaminess but also helps give it shape because it is no-bake. It results in a light and fluffy pumpkin pie.

Ingredients to Make this Pumpkin Dessert

You’ll need the following simple ingredients to make this recipe. The full detailed instructions are on the printable recipe card below.

  • large marshmallows
  • pure pumpkin (not pumpkin pie filling)
  • ground cinnamon
  • pumpkin pie spice
  • teaspoon salt
  • Cool Whip or whipped topping
  • packaged graham cracker crust

Ingredient Notes: You can make your own crust for this recipe of course. Yet buying one from the grocery store is convenient and I’m sure no-one will notice.

How to Make No Bake Pumpkin Pie

First you’ll need to heat the marshmallows, pure pumpkin puree, and spices in a medium saucepan on the stove. Make sure to stir frequently to avoid burning, and cook on medium low heat.

When smooth and combined, remove from the stove and allow the filling to cool. Really, the waiting to cool and then set is the hardest part of this recipe.

The waiting is torture, but worth the toasted marshmallow taste!

Once it has cooled to room temperature, you fill a store bought shell with the pumpkin mixture. Then place pie plate into the refrigerator so it sets.

Don’t forget the whipped cream topping on top of the pie before enjoying, of course. Personally, the more topping the better.

While you could use your own homemade crust, this no bake pumpkin dessert recipe is all about convenience. So I used a graham cracker crust, mainly because it just seemed to fit best with marshmallows.

Anyway, back to the topic at hand – to tone down the sweetness some, feel free to use a regular pie crust.

Keep in mind you will have to pre-bake it though. A good time to do so is when you’re letting the filling cool after stovetop melting.


Make Ahead:

You can easily make this No Bake Pumpkin Pie ahead of time, even the night before. It’s one less thing you’ll have to make on the big day {or any day really, because pumpkin pie}.

Actually, the longer you allow it to set, the more it firms up and thus, the easier it is to cut and serve.

Storage:

Aside from the ability to make ahead of time, you can also enjoy this pie as leftovers. Simply cover with plastic wrap or place into an airtight container, and regriderate for up to 5 days.

Ingredients

  • 1 (10oz) bag large marshmallows
  • 1 cup pure pumpkin
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 container Cool Whip
  • 1 (9") packaged graham cracker crust

Instructions

    1. Stir together marshmallows, pumpkin, cinnamon, pumpkin pie spice, and salt in a saucepan over medium low heat until melted.

    2. Mix until smooth and combined.

    3. Pour into a mixing bowl and cool for about 30 minutes, or until room temperature.

    4. Stir in cool whip and pour into graham cracker crust. Spread evenly and cover pie before putting in the refrigerator for at least 6 hours.

    5. Once firmed up, slice and serve with whipped cream. 

Notes

- Instead of Cool Whip, use spray whipped topping or your own homemade variety

- Feel free to use regular pie crust if you choose
