Cauliflower Fried Rice

If you love Chinese fried rice, but don’t enjoy the carb count that comes with it, you’ll love this easy Cauliflower Fried Rice recipe. It takes few ingredients, can be ready in 15-20 minutes and is loaded with vegetables.

Healthy Cauliflower Fried Rice

 
On one grocery shopping trip, my daughter picked up a bag of cauliflower rice. How could I argue, it’s a vegetable and a great replacement to many carb-laden foods. My Cauliflower Crust Pizza was a hit with the kids, so immediately thoughts were churning on what new I could make with a bag of cauliflower rice.

Then one evening, I asked the girls what they wanted as a meal side that night. Cauliflower rice was chosen and the answer – was cauliflower rice!

You could just saute the bits in a bit of oil and seasoning and make ‘rice’, yet I wanted something with a bit more flavour and colour on this evening.

I had been craving Chinese food around this time, and thought this would make a great substitution to usual rice, in fried rice!

I really had to search the old memory in making the recipe for Cauliflower Fried Rice, since I just started throwing into the pan. I was a mad-scientist in the kitchen on this day, as it turned out perfectly!

I first added olive oil to a pan and added the cauliflower rice with some garlic seasoning {covering the pan so the steam helps cook the cauliflower}. I added some frozen mixed vegetables and once all was cooked to desired consistency – added soy sauce.

Next time I might try and add in an egg and more seasoning, just to see the comparison but I have to say – this recipe as it is – perfection in in every bite! Not only did it taste very similar to traditional fried rice, yet it was a healthier option to a side dish for sure.

This Healthy Cauliflower Fried Rice tastes just as delicious as your typical take-out favourite, but without all the calories and carbs!

This would make a great side dish with our Best General Tso’s Chicken!

Cauliflower Fried Rice

Yield: 6 people
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

  • 1/2 bag cauliflower rice
  • 2 tbsp olive oil
  • 2 cups frozen mixed vegetables
  • pepper, as desired
  • soy sauce, as desired

Instructions

  1. Add olive oil to a pan and add in the cauliflower rice and garlic powder. Cover the pan and let steam for 2-3 minutes.
  2. Add the mixed vegetables and pepper - and cover again, stirring to combine every now and then until all the vegetables are cooked to desired consistency. 
  3. Once vegetables are cooked, add in desired soy sauce, combine well and once heated again - serve immediately and enjoy!

  1. well this might be worth a try. I am not a huge fan of the cauliflower pizza, but I do love zucchini crust pizza. Looking to reduce carbs and I bet this takes on all the other delicious flavours.
