This time of year makes me especially happy, since there’s an abundance of fresh berries available. I literally ‘berry all the things‘, and take advantage of the great prices and just-picked mouthwatering taste.

Fresh Blueberry Shortcake

My ultimate favourite is fresh BC Blueberries which are in-season and distributed around Canada in July and August {those in BC can get them fresh from July through October}, yet they can also be found frozen during the off-season months.

Year after year when the fresh ones are available, I usually buy them not by the basket, but by the caseload. It’s my summertime score when shopping at my grocer or at our local farmers market.

In fact, one of my favourite memories as a kid was when we did a road trip through British Columbia and stopped at a couple small road-side stands.

Each and every time I left a trail of blueberries from the stand to the car, I just couldn’t wait to dive in. I most likely had a blue-stained hand that entire summer vacation.

Well, here we are and another summer is upon us – and after much anticipation, BC Blueberry season is finally here! Next I’m going to my these much-loves Blueberry Pie Bars

To prep, I’ve been gathering together many scrumptious blueberry recipes, like this Blueberry Shortcake recipe, which is easy and oh so delicious. Long summer days spent in the warm sunshine call for this cool and refreshing dessert.

It’s an easy dessert to make, so it’ll fit well with those busy yet fun-filled days we are all having during these busy summer months.

Nice and light, cool and sweet – Blueberry Shortcake is ideal for gatherings and BBQ’s, or just a quiet evening spent at home relaxing. It’s one of those classic desserts that generations will love.

Of course the main ingredient in my Blueberry Shortcake recipe is fresh BC Blueberries. I recently learned that British Columbia is the largest highbush blueberry region in the world with over 800 blueberry growers!

Easy Blueberry Shortcake dessert

It’s important to me to buy Canadian when possible, and help support our Canadian economy and the associated farmers. Highbush blueberries are the big fat and plump blueberries, which are very different than the lowbush {wild} blueberries.

Blueberry Shortcake - easy to make and delicious. The perfect end to a summer meal is with fresh blueberries and real whipped topping to twist a classic shortcake. It's one light dessert recipe that's sure to delight.

Ingredients

  • 2 cups BC Blueberries {fresh or frozen}
  • 1 can Pillsbury Flaky Rolls
  • ¼ cup Butter, melted
  • ¼ cup + ½ cup Sugar
  • 1 tsp Lemon juice
  • ¼ cup + 1 tbsp Water
  • 1 tsp Ginger powder
  • 1 tbsp Cornstarch
  • Frozen Whipping Cream {like Cool Whip}, as desired

Instructions

  1. In a saucepan - place the blueberries, ginger, ¼ cup sugar, lemon juice and ¼ cup of water. Bring to a boil, and then reduce heat to simmer.
  2. Open can of biscuits and arrange on a parchment lined baking sheet. Preheat oven to 375.
  3. Brush biscuits with melted butter. Place the ½ cup of sugar in a bowl and drop/roll the biscuits in the sugar to coat.
  4. Bake the biscuits for approximately 10 – 12 minutes or until they are golden brown and baked through. Let cool.
  5. While the biscuits are baking, combine the cornstarch and 1 tbsp of water into a slurry, and add to the simmering blueberry mixture. When the blueberry mixture thickens, remove from heat and let cool.
  6. For assembly, cut a biscuit in half. Spoon approximately 3 tbsp of blueberry mixture onto one half of the biscuit. Follow with a large dollop of cool whip. Top with the other half of the biscuit and serve.
  7. Enjoy!
